Cranberry Chicken Salad with Light Balsamic Dressing
I’m pretty sure it was either my mom or dad who came up with this easy cranberry chicken salad recipe originally.
We have been making it for years and is a favorite in our family.
Today for lunch I made it, which is typical because I keep these ingredients on hand most of the time.
I really wasn’t even planning to take pics and posting the recipe, but it looked SO good that I couldn’t resist sharing with you.

Whenever I make chicken dishes I make more than needed to have extra chicken for making salads and wraps.
This was from our dinner last night, but I do make Simple Shredded Chicken for Meal Prep as well.
Which is a huge time saver when you work full time and a busy mother of four.
Basically just cut up your lettuce, this is romaine but use your favorite lettuce if you prefer something else.
Top with chicken, dried cranberries, glazed or candied pecans (which I find by the salad dressings and croutons at the store in a little pouch), blue cheese crumbles, and a light balsamic dressing.
I make the dressing in bigger batches and keep in a bottle in the fridge so I don’t have to make it every time we have salads.
It’s simply combining light mayo, balsamic vinegar, and some sugar.

The sweetness from the cranberries and candied pecans, along with the salty blue cheese.
And tang from the balsamic creates a divine flavor combination that makes this salad out of this world delicious!

Cranberry Chicken Salad with Light Balsamic Dressing
A healthy salad with a great combo of flavors and a simple homemade dressing!
Ingredients
For the Light Balsamic Dressing
- 1/2 cup light mayo
- 1 Tbsp balsamic vinegar
- 1 tsp sugar
For the Cranberry Chicken Salad
- 6 cups romaine lettuce (or lettuce of choice) chopped
- 1 cup cooked, shredded chicken
- 1/2 cup dried cranberries
- 1/2 cup candied pecans
- 1/2 cup crumbled blue cheese (or feta cheese)
Instructions
For the Light Balsamic Dressing

In a small bowl, whisk together the light mayo, balsamic vinegar, and sugar. Taste and add more balsamic or sugar depending on your taste. Set aside.
For the Cranberry Chicken Salad

Place 3 cups of lettuce on each bowl or plate. Evenly divide the cooked, shredded chicken, dried cranberries, candied pecans, and blue or feta cheese.

Serve with the Light Balsamic Dressing.
