Slow Cooker Caesar Chicken

Slow Cooker Caesar Chicken

This recipe for Slow Cooker Caesar Chicken was just amazingly delicious!

My slow cooker/ Crock Pot has been getting quite the workout lately!

I’m making Slow Cooker Pork Carnitas as I write this for our Sunday dinner this evening.

Crockpot Pork Carnitas

I recently made Slow Cooker Italian Chicken, which I never quite stopped dreaming about.

So I decided to try a very similar recipe to that one using Caesar dressing instead of Italian dressing.

How to make Slow Cooker Caesar Chicken

It starts by adding a few simple ingredients to a bowl.

A bottle of Caesar dressing, garlic paste (or minced garlic), Italian seasoning, and grated parmesan cheese.

sauce ingredients in a bowl

Whisk that together and pour over top of two pounds of chicken in a slow cooker.

I sprinkled the chicken with kosher salt and pepper, plus a little crushed red pepper flakes for some spice.

Then set the slow cooker to low and go about your day, letting the slow cooker do all the work 🙂

Fast forward six to eight hours and this is what will await you!

A few extra steps and then dinner will be served…

Add a block of cream cheese and fresh spinach leaves to the chicken about a half hour before serving.

At first you will think this is a mean recipe trick, but I promise the spinach will cook waaaaayyyy down.

Give it a few stirs throughout the half hour and the spinach will cook down.

The chicken will break apart, and the cream cheese will melt.

Cook four cups of egg noodles according to package directions in salted boiling water, drain.

And add them to the slow cooker.

Give it all a stir and a taste test.

Add more kosher salt, pepper, and/or crushed red pepper flakes if needed.

Now comes the best part…tasting the Slow Cooker Caesar Chicken!!!

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 Tbsp garlic paste or minced garlic
  • 16 oz Caesar salad dressing
  • 1/2 cup grated parmesan cheese
  • 1 Tbsp Italian seasoning
  • kosher salt, pepper, crushed red pepper flakes
  • 8 oz cream cheese
  • 6 oz fresh spinach leaves
  • 4 cups cooked egg noodles

Instructions

  1. Place the chicken in the slow cooker. In a bowl whisk together the garlic, Caesar dressing, grated parmesan, Italian seasoning, kosher salt, pepper, and crushed red pepper flakes. Pour over top of the chicken.

  2. Cook on low for 6 to 8 hours. 30 minutes before serving add the cream cheese and spinach, and stir a few times (the chicken will break into smaller pieces as you stir, the cream cheese will slowly melt into the sauce, and the spinach will cook down).

  3. Add the cooked egg noodles and stir until evenly mixed. Taste for seasoning and add more kosher salt, pepper, and/or crushed red pepper flakes if needed.
