
Fiesta Corn Dip
I had a similar fiesta corn dip recipe at a picnic last year, and the guy who made it told me what was in it.
I honestly didn’t remember everything except the corn (duh) and Rotel tomatoes.
So I kinda played around with it and came up with my own version.
Easy dips that you can serve cold are perfect for bringing to a picnic or party, and this one is really addicting!
How to Make Fiesta Corn Dip
2 cans corn, 2 cans Rotel tomatoes with green chilies, 2 cups shredded cheese, 1 1/2 cups sour cream, and a packet of taco seasoning…
Add everything to a bowl and stir until it’s all combined.

Oooops, forgot the jalapeno!
I don’t use the seeds because it would be way too spicy.
Just mix it up, taste for seasoning, add kosher salt or pepper if desired.
I like a little spice in my life, so I add ground red pepper and hot sauce.

You can serve this Fiesta Corn Dip right away, but it’s a little better if you refrigerate it for at least an hour.
Just a little extra time for the flavors to come together.
Serve with Fritos Scoops (my choice) or tortilla chips.
Fritos Scoops make anything better, so I went with those.

Another must try dip just as yummy as fiesta corn dip is Loaded Potato Chip Dip!
Perfect dip for thick cut or kettle potato chips. Always a hit every time I make this one.

Fiesta Corn Dip
An easy and delicious dip to serve at any party
Ingredients
- 2 cans corn drained
- 2 cans Rotel Tomatoes with Green Chilies drained
- 1 1/2 cups reduced fat sour cream
- 2 cups shredded cheese
- 1 packet taco seasoning mix
- 1 jalapeno (no seeds) minced
- kosher salt, pepper
- Optional: ground red pepper or hot sauce
- Fritos Scoops or tortilla chips
Instructions

In a large bowl, mix together corn, Rotel, sour cream, cheese, taco seasoning, and jalapeno. Mix together and taste for seasoning. Add kosher salt, pepper if needed. For extra spice add ground red pepper and hot sauce.

Best if made a few hours before serving, stored in the fridge. Serve with Fritos Scoops or tortilla chips.
