Corn and Black Bean Salsa
This Corn and Black Bean Salsa recipe is always a hit!
If you’re looking for an easy appetizer or corn salsa idea that’s perfect for a large crowd, look no further!
Plus it’s super easy to throw together and pretty inexpensive which is always a plus.
Basically it’s just opening up a few cans and throwing everything into a bowl.
The only actual work involved is chopping an onion (which really isn’t too bad, right?!).
If you have leftovers, it’s SO good over grilled chicken!
Or if you’re looking for a twist it’s excellent with feta cheese.
How to Make Corn and Black Bean Salsa
Drain the corn, drain and rinse the beans in a colander and throw those into a big bowl.
Drain and add the cans of Rotel tomatoes, green chilis (or jalapenos for a spicier version), and some chopped red onion.
Mix in a little Italian dressing (or fat free Italian if you want to make it a little lighter) and sugar…that’s it!
I taste it and add a little kosher salt and pepper at the end.
Hot sauce is great addition as well.
I do find that when using a fat free Italian that it needs a little more tang, so I add just about a teaspoon of apple cider vinegar.
I taste and season and taste and season quite a bit until it’s just right.
Serve Corn and Black Bean Salsa with tortilla chips for dipping.
Be prepared that people will ask for this recipe.
It’s happened multiple times at every party I’ve brought it to, it’s THAT amazing 🙂

Corn and Black Bean Salsa
The perfect appetizer to bring to any party or celebration, so easy and yummy!
Ingredients
- 2 15 oz cans corn
- 1 15 oz can black beans
- 1 15 oz can black eyed peas
- 2 10 oz cans Rotel or diced tomatoes
- 1 4 oz can chopped green chilis or jalapenos
- 1 red onion diced
- 1 cup italian dressing (or fat free italian dressing)
- 1 Tbsp sugar
- kosher salt, pepper
- tortilla chips
- Optional: hot sauce, apple cider vinegar
Instructions

Drain the cans of corn and put the corn into a big bowl.

Drain the can of black beans and black eyed peas in a colander and rinse with water. Add the beans to the bowl.

Drain and add the Rotel tomatoes, green chilis or jalapenos, and diced red onion to the bowl.

Pour the italian dressing and sugar into the bowl and stir to mix evenly. Add kosher salt and pepper to taste. Optional: add hot sauce
Note: If using fat free italian dressing, add a tsp of apple cider to add more tang if needed.

Serve with tortilla chips for dipping.
