Cheesy Chorizo Baked Chicken
At our favorite Mexican restaurant, my husband and I get Chorizo Queso to dip our tortilla chips in. It’s basically queso mixed with chorizo sausage. That is the inspiration behind this new recipe, Cheesy Chorizo Baked Chicken.
My whole family went nuts over this yummy and easy meal.
My son even told me I need to make it at least once a week 🙂
How to make Cheesy Chorizo Baked Chicken
This dish starts with four thin cut chicken breasts.
I brushed them with olive oil and sprinkled both sides with taco seasoning.
Since these are thin cut, they only took about 25 minutes in a 400 degree oven to cook.
You’ll want to add a few more minutes if using regular cut chicken breasts.
While the chicken is baking in the oven, make the chorizo in a skillet over medium heat.
This is actually chicken chorizo sausage, so it’s a bit lighter in color than regular chorizo.
Be sure to put the chorizo on a plate lined with paper towels to drain the excess oil after it’s cooked.
After the 25 minutes in the oven, remove the chicken dish from the oven and top it with the cooked chorizo and a jar of queso.
This goes back into the oven for just about five minutes, so the sausage and queso warm up.
I felt this needed a splash of freshness, so I topped ours with a fresh diced tomato and cilantro.

We had our Cheesy Chorizo Baked Chicken with both warm tortillas on the side and tortilla chips.
My son cut his up and rolled the chicken, sausage, and queso in his tortilla.
I crushed a few chips over top. And my husband made his almost like a dip.
We actually put a towel in the center of our table and put the hot dish right in the middle and scooped up all the extra queso and chorizo with our chips.

Cheesy Chorizo Baked Chicken
One pan dinner of chicken, chorizo, and cheesy queso
Ingredients
- 4 thin cut chicken breasts
- 1 Tbsp olive oil
- 1 Tbsp taco seasoning
- 1 pound ground chorizo sausage
- 1 15 oz jar queso
- Optional toppings: tomato, cilantro
Instructions

Brush both sides of the chicken with olive oil and sprinkle with the taco seasoning.

Place the chicken in a casserole dish and bake in a 400 degree oven for 25 minutes.
Note: Increase bake time if using regular cut (not thin cut) chicken breasts,

As the chicken bakes, cook the chorizo in a skillet over medium heat for 5 to 8 minutes, breaking it apart as it cooks. Drain on paper towels to remove excess grease.

When the chicken is done, top the chicken with the cooked chorizo and pour the queso over top. Bake an additional 5 minutes. Serve with tomatoes and cilantro over top if desired.
Note: This is very good if served with warm tortillas and/or tortilla chips.
