Italian Sub Pasta Salad
When your wonderful friends come over for a pool day, you make an extra special recipe like Italian Sub Pasta Salad.
Well, at least that’s what I did đŸ˜‰
This is just one of the delicious treats I made for these incredible friends of mine, but probably the favorite among all of us.
It’s basically everything you’d find on an Italian sandwich, but in salad form.
And for the “bread” part, we are using cheese tortellini.
How to Make Italian Sub Pasta Salad
First, boil a 19 ounce bag of tortellini according to the package directions.
Mine boiled for 3 minutes in salted water.
Then drain the tortellini and rinse well with cold water to prevent it from getting mushy.
Put in a large bowl and add diced salami, ham, pepperoni, and provolone cheese.
Next add 3/4 cup each Italian dressing and mayo.
And some dried oregano, kosher salt, and pepper.
Stir until combined and store in the fridge, covered, until ready to serve.
Right before serving add a pint of grape tomatoes, banana pepper rings, and shredded lettuce.
Mix it together and most likely you’ll need to add more Italian dressing and mayo.
The pasta kind of soaks up the dressing as it sits in the fridge, so that’s why the extra may be needed.
Serve Italian Sub Pasta Salad right away, and most likely it won’t last long!
It’s a great side to bring to a party, picnic, or celebration that’s just unique enough to bring that wow factor.
We did have some leftovers and they were really good the next day even though the lettuce wasn’t quite as crisp.

Italian Sub Pasta Salad
Italian Sub Pasta Salad has all the yumminess of an Italian sub but served with tortellini as a pasta salad, a perfect side for any party
Ingredients
- 1 19 oz bag frozen cheese tortellini
- 15 to 20 slices pepperoni
- 12 to 15 slices salami
- 8 to 10 slices deli ham
- 8 slices provolone cheese
- 3/4 cup mayo (possibly more)
- 3/4 cup Italian dressing (possibly more)
- 2 Tbsps dried oregano
- kosher salt, pepper
- 1 pint grape tomatoes
- 1 cup shredded iceberg lettuce
- 1/2 cup banana pepper rings
Instructions

Boil the tortellini according to the package directions (mine boiled in salted water for 3 minutes). Drain and rinse with cold water.

Cut the pepperoni in half, and cut the salami, ham, and provolone cheese into smaller pieces.

Put the cold tortellini in a bowl and add the pepperoni, salami, ham, cheese, mayo, Italian dressing, oregano, kosher salt, and pepper. Toss until combined and store covered in the fridge until ready to serve.

When ready to serve add the tomatoes, lettuce, and banana peppers. Stir until combined and add more mayo and Italian dressing if needed (mine needed just a bit more for my taste). Serve right away.
