Salmon Pasta with Pesto Cream Sauce

Share Post
Salmon Pasta with Pesto Cream Sauce was phenomenal on almost a ridiculous level.
You know those dinners where everyone is silent except for the occasional “Mmmmmmm!” and “Oh my goodness this is SO freaking good!” comment?
I made a whole smoked salmon a few days ago and was deciding what to do with the leftovers.
I am REALLY glad we had those leftovers now because this dish will be a new family favorite.
You don’t have to make your own smoked salmon, though.
The seafood counter at most grocery stores sells already smoked salmon.
You could even top the pasta with baked salmon.
How to Make Salmon Pasta with Pesto Cream Sauce
The ingredient list isn’t very long for this recipe.
A pound of Rigatoni, heavy cream, pesto, parmesan cheese, and butter.
I went with rigatoni for the pasta and we all loved it, but really any pasta you prefer will work perfectly.

Oh, and of course the smoked salmon.

Boil the pasta in salted water according to the package directions.
Drain and rinse the pasta with cold water to stop the cooking.
This will prevent the pasta from getting mushy while you make the sauce.
Put the same pot that you boiled the pasta over medium heat and add 4 Tbsps butter.
Once the butter is melted add a pint of heavy cream.
Bring the cream to a boil and then reduce the heat to low and simmer for 7 minutes.

Next add the pesto and parmesan cheese.
Stir until the cheese is melted and everything is evenly combined.

Finally add the cooked pasta, capers, smoked salmon, kosher salt, and pepper.
Give it a stir and we are ready to eat!

Garnish your Salmon Pasta with basil to make it even prettier 🙂
Go ahead and dig in…SO flipping amazing!
