What’s not to love about a cheesy, creamy pasta dish?!

Especially one with cajun flavors and bourbon!

This extra special dish is a decadent treat for sure!

Here is how to make Cajun Chicken Pasta with Bourbon Cream Sauce

Start by boiling the pasta in salted water according to the package directions.

I am using penne because it’s my son’s favorite.

Once the pasta is cooked, strain it and…very important…rinse with cold water really well.

This will stop the pasta from cooking and prevent it from turning mushy.

You are going to need a very large skillet because this makes A LOT!

Or you could even use the big pot that you used to boil the pasta.

Add a pound and a half of diced chicken to the skillet with olive oil, cajun seasoning, kosher salt, and pepper.

Let this cook 6 to 7 minutes and then remove the chicken and set aside.

While my chicken cooked, I diced these gorgeous veggies.

Mushrooms, asparagus, red bell pepper, and an onion.

So the chicken is set aside, but leave the skillet over medium heat and add more olive oil and the veggies.

Also add more cajun seasoning, kosher salt, and pepper.

Cook the veggies for 6 to 7 minutes and then add the chicken back in.

And here is where this dish turns into a party!

Oh yes, heavy cream and bourbon, baby đŸ˜‰

Also add in some garlic at this point.

Bring this to a boil and let it simmer over medium heat for 6 to 7 more minutes.

Now comes the cheese!

Hey, I never claimed this was a healthy dish at all…but it’s worth every bit of indulgence!

This is a 16 oz block of mozzarella cheese that I diced.

Add this in with the cooked pasta and stir until the cheese melts and the sauce will get nice and thick.

Cajun Chicken Pasta with Bourbon Cream Sauce has lots of veggies and cajun flavor in a decadent and delicious bourbon cream sauce!

Ingredients

  • 1 pound penne pasta
  • 2 Tbsps olive oil
  • 1 1/2 pounds chicken breasts cut in bite size pieces
  • 3 1/2 Tbsps cajun seasoning
  • kosher salt, pepper
  • 1 onion diced
  • 1 bunch asparagus cut in inch pieces
  • 8 oz sliced mushrooms
  • 1 red bell pepper cut in inch slices
  • 1 Tbsp garlic paste or minced garlic
  • 1 pint heavy cream
  • 1/2 cup bourbon
  • 16 oz block mozzarella cheese cut into cubes

Instructions

  1. Cook the pasta according to package directions. Rinse with cold water to stop cooking and set aside.

  2. In a very large skillet (or the same big pot used to make the pasta) over medium heat add 1 Tbsp of the olive oil, chicken, 1 1/2 Tbsps of the cajun seasoning, kosher salt, and pepper. Cook 6 to 7 minutes, stirring occasionally. Remove the chicken from the skillet and set aside.

  3. In the same skillet over medium heat add remaining 1 Tbsp olive oil, onion, asparagus, mushrooms, red pepper, remaining 2 Tbsps cajun seasoning, kosher salt, and pepper. Cook 6 to 7 minutes, stirring occasionally.

  4. Add the chicken back into the skillet and the garlic, heavy cream, and bourbon. Bring heat to high and when it boils reduce heat to medium and simmer 6 to 7 minutes, stirring occasionally.

  5. Add the cooked pasta and mozzarella cheese. Cook 3 more minutes, stirring so the cheese melts and sauce thickens.

  6. Taste for seasoning and add more cajun seasoning, kosher salt, and pepper if needed.
