Bacon Jalapeno Popper Stuffed Burgers

This recipe for Bacon Jalapeno Popper Stuffed Burgers got multiple of my “happy dinner” dances and quite a few “oh yeahs” too!

Something magical happens when stuffing burgers with bacon and cheese.

How to make Bacon Jalapeno Popper Stuffed Burgers

The stuffed part of the burgers is a jalapeno popper filling…cream cheese, shredded cheese, and a minced jalapeno.

And the bacon part of these burgers is mixed in with a pound and a half of ground beef.

I also mixed in some Worcestershire sauce, kosher salt, and pepper.

Form the ground beef into 8 thin burger patties.

And also form the cream cheese filling into 4 patties that are slightly smaller than the burger patties.

Then place the cream cheese patty on a burger just like this.

When I told my welder fabricator husband I wanted to make stuffed burgers he even made me a metal burger press that was perfect for forming and stuffing these.

So of course he was a part of every step of building these gorgeous burgers.

These can certainly be made without this handy dandy tool, but it did make it very nice.

Put another beef patty right over top and seal the edges and press it all together.

Repeat with the remaining burgers for a total of 4.

These burgers will grill over medium high heat for 4 to 6 minutes per side, depending on how you like your burger cooked.

Some of the filling started coming out of mine, but at least I didn’t lose any of it.

Put even more cheese on the burgers during the last minute of grilling.

Put them on a bun and add additional toppings of choice such as mayo, ketchup, pickle, lettuce…whatever you like đŸ™‚

Bacon Jalapeno Popper Stuffed Burgers take regular burgers to a whole new level, stuffed with cream cheese, bacon and jalapenos!

Ingredients

  • 8 slices bacon
  • 4 oz cream cheese at room temp
  • 1 cup shredded cheddar cheese
  • 1 jalapeno minced, seeds and ribs removed
  • 1 1/2 pounds ground beef
  • 1 Tbsp worcestershire sauce
  • kosher salt, pepper
  • 4 slices colby jack cheese
  • 4 burger buns
  • Optional toppings of choice: lettuce, mayo, ketchup, pickles, etc.

Instructions

  1. Set a skillet over medium heat, use kitchen scissors to cut the bacon slices right into the skillet in bite size pieces. Cook 4 to 5 minutes and remove from skillet and place on paper towels.

  2. Put the cream cheese, shredded cheddar cheese, and diced jalapeno in a bowl. Stir until evenly mixed.

  3. Put the ground beef in a bowl and add the bacon, worcestershire sauce, kosher salt, and pepper. Gently stir together with your hands until evenly combined.

  4. Form the beef into 8 thin burger patties. Form the cream cheese mixture into 4 patties, just a little smaller than the burgers.

  5. To make each stuffed burger start with a burger patty, place one of the cream cheese patties on it, then top off with another burger patty. Press the sides together.

    Note: You could also use a burger press to assemble the burgers.

  6. Preheat the grill to medium high heat. Grill the burgers 4 to 6 minutes per side. Top each with a slice of cheese during the last minute. Serve on the burger buns with desired toppings.
