Chopped Greek Chicken Salad

This healthy and delicious Chopped Greek Chicken Salad is a must try recipe, especially if you love Mediterranean flavors.

It has an easy to make dressing that also doubles as the marinade for the chicken.

You can add any toppings of choice to make this salad your own and perfectly perfect for you.

And one of my favorite things about chopped salads is that everything is already cut into bite size pieces.

And the dressing is already tossed in making it easy to enjoy đŸ™‚

How to Make Chopped Greek Chicken Salad

I started this the day before we had it for dinner to let the chicken marinate overnight.

The dressing is made by combining some Greek yogurt, buttermilk, a little mayo, some dry ranch seasoning, and lemon juice.

You can whisk it together in a bowl, or put in a mason jar and shake it.

Next, put two chicken breasts in a gallon size plastic bag.

And add a few spoonfuls of the dressing.

Season with kosher salt, pepper, and crushed red pepper flakes as well.

Massage the bag until combined.

Marinate in the fridge overnight, and also store the dressing in the fridge with a lid.

I chose to grill my chicken, but you could bake yours or cook in a skillet with some olive oil.

For grilling, preheat the grill to medium high heat.

And grill the chicken 5 to 6 minutes per side.

Cook time will depend on how thick the chicken is.

Just make sure it’s over 165 degrees and you’ll be good to go.

While the chicken cools, set out your salad toppings of choice.

I went with feta cheese, kalamata olives, tomatoes, and cucumber.

Onions or croutons would be great additions too!

Chop the lettuce and slice and dice the other toppings as needed.

And place everything in a bowl with some diced chicken.

Since this is a chopped salad, add the dressing and toss together before serving.

Ingredients

  • 1 5 oz container plain Greek yogurt (regular or non fat)
  • 1/2 cup buttermilk
  • 2 Tbsps lemon juice
  • 2 Tbsps dry ranch seasoning
  • 2 Tbsps mayo
  • 2 chicken breasts
  • kosher salt, pepper, crushed red pepper flakes
  • 6 cups chopped lettuce (I used romaine)
  • Salad toppings of choice: feta cheese, chopped cucumber, kalamata olives, tomatoes, onion, croutons

Instructions

  1. Put the yogurt, buttermilk, lemon juice, dry ranch seasoning, and mayo in a bowl. Whisk until combined.

  2. Put the chicken in a gallon size plastic bag. Add a few spoonfuls of the yogurt mixture to the chicken and kosher salt, pepper, and crushed red pepper flakes. Massage the bag until combined.

  3. Marinate the chicken in the fridge several hours overnight. Store the remaining yogurt mixture covered in the fridge to use as the salad dressing.

  4. Preheat the grill to medium high. Once hot, grill the chicken 5 to 6 minutes per side or until the internal temp is over 165 degrees.

  5. Let the chicken cool while you assemble the salads. Divide the lettuce between four bowls or containers (if meal prepping). Top the salads with toppings of choice such as feta cheese, chopped cucumber, kalamata olives, tomatoes, onion, croutons.

    Note: To make this more of a chopped salad, you could add lettuce, toppings, and dressing in a bowl. Toss until combined and serve.

  6. Chop the chicken and add the chicken to the salads. Serve with the yogurt dressing.
