Lemon Herb Chicken Thighs

I’m putting my fresh herbs to good use with this succulent Lemon Herb Chicken Thighs recipe.

You have cooking options here too…in the oven or if you have a smoker or Traeger pellet grill, use that for even extra yumminess đŸ™‚

With the bright flavor from the lemon and the freshness of the herbs, this is one spectacular chicken dinner!

How to Make Lemon Herb Chicken Thighs

Use any fresh herbs that you have, either store bought or home grown…just make sure they aren’t dried.

I mean, dried would work but you won’t quite get the same flavor.

We have chives, thyme, basil, and rosemary along with olive oil, garlic, and a whole lemon for the marinade.

Chop the chives and strip the leaves from the thyme, rosemary, and basil.

Then chop the herbs pretty finely.

Put 6 chicken thighs in a gallon size plastic bag.

Add olive oil, the juice of the lemon, chopped herbs, garlic, kosher salt, pepper, and crushed red pepper flakes.

Massage the bag until the chicken is evenly coated and marinate for an hour, or even better overnight.

Cooking directions for the oven would be to place them on a baking sheet or dish. Bake in a 400 degree oven for 40 to 45 minutes.

For the smoker I am using my Traeger wood pellet grill/smoker!

Set the smoker temp to 250 degrees and place the chicken on the grill grate for 1 1/2 hours.

Flip them halfway through and let them cook another hour to hour and a half.

I like to use an instant read thermometer to make sure they are 165 to 170 degrees.

Ingredients

  • 6 chicken thighs
  • 1 whole lemon (or approx 4 Tbsps lemon juice)
  • 1/2 cup chopped, fresh herbs of choice (I used a combo of thyme, rosemary, basil, and chives)
  • 1 Tbsp olive oil
  • 1 Tbsp garlic paste or minced garlic
  • kosher salt, pepper, crushed red pepper flakes

Instructions

  1. Put the chicken thighs in a gallon size plastic bag. Squeeze the juice of the lemon into the bag and add the olive oil, chopped herbs, garlic, kosher salt, pepper, and crushed red pepper flakes.

  2. Massage the bag until evenly combined and marinate in the fridge at least an hour or overnight.

  3. Cook the chicken according to one of these methods:

    Oven- Put the chicken thighs in a casserole dish or baking sheet. Bake in a 400 degree oven for 40 to 45 minutes.

    Traeger/ Smoker- Set your smoker to 250 degrees and place the chicken in the smoker. Smoke them 1 1/2 hours and flip them over, smoke another 1 to 1 1/2 hours.
