Easy BLT Dip

When my teacher friends went back to school this year, I made them this Easy BLT Dip recipe to wish them a successful school year đŸ™‚

Everyone has a different love language and mine is food.

I show you I care by making you something special and yummy.

This was perfect timing because I had some gorgeous garden fresh tomatoes and chives!

Everything you need is shown below, it’s super easy to make but also extraordinarily scrumptious!

I mean, you really can’t go wrong with anything that has bacon and cheese, right?!

How to Make EASY BLT Dip

The first step is setting a skillet over medium heat.

And use kitchen scissors to cut a pound of bacon into the skillet, aiming for bite size pieces.

Cook the bacon, stirring a few times, for 5 to 7 minutes.

Then remove the bacon and place on paper towels to drain the excess grease.

Next put 16 oz sour cream, an 8 oz block cream cheese, 1/2 cup mayo, a ranch mix packet, kosher salt, and pepper in a large bowl.

Helpful hint: The cream cheese is MUCH easier to mix if it’s room temperature đŸ™‚

Use a hand mixer and mix this for about 1 minute.

Add to the bowl half of the bacon, a cup of shredded cheese, and some green onions (or in my case I am using chives from my garden).

Mix this together with a spoon and spread it evenly in a casserole dish.

Why a foil pan? Easy clean up of course đŸ˜‰

If you’re feeling fancy go ahead and use a “real” casserole dish.

Another helpful hint (just look at me being extra full of tips and tricks today đŸ˜‰ )…when you dice the tomatoes, place them on paper towels to soak up any extra liquid.

This will help prevent the tomatoes from making the dip, well….liquid-y.

Top the dip with some thinly shredded lettuce.

Then pile on the remaining bacon, cheese, green onions, and the diced tomatoes.

Refrigerate for at least an hour. Or you can make this up to 24 hours ahead of time and it will be ready to serve when you are.

Serve Easy BLT Dip with crackers or Fritos!

Easy BLT Dip

Easy BLT Dip is a great dip to make especially with garden fresh tomatoes! Great to bring to any party or celebration served with crackers or Fritos!

Ingredients

  • 1 pound bacon
  • 16 oz sour cream
  • 8 oz cream cheese at room temp
  • 1/2 cup mayo
  • 1 oz packet ranch dip mix
  • kosher salt, pepper
  • 2 cup shredded cheddar cheese
  • 1/4 cup green onions chopped
  • 2 cups shredded lettuce
  • 2 to 3 roma tomatoes diced
  • crackers or Fritos for dipping

Instructions

  1. Set a skillet over medium heat. Use kitchen scissors to cut the slices of bacon into the skillet. Cook 5 to 7 minutes, stirring a few times. Remove the bacon and place on paper towels to drain excess grease.

  2. Put the sour cream, cream cheese, mayo, ranch dip mix, kosher salt, and pepper in a large bowl. Beat with a hand mixer for 1 minute. Stir in half of the bacon, half of the cheese and half of the green onions.

  3. Put this mixture in a casserole dish and spread it evenly with a spoon.

  4. Sprinkle the shredded lettuce, tomato, remaining cheese, remaining bacon and remaining green onions over top.

    Tip: Placing the diced tomatoes on paper towels for a minute helps absorb extra liquid.

  5. Refrigerate 1 hour before serving, can store covered in the fridge for up to 24 hours before serving with crackers or Fritos.
