I call this healthy recipe Make Me Beautiful Salad because it’s soooooo high in nutrition to help with healthy skin and hair.

Beauty starts with what we eat and drink, but don’t get me wrong I splurge A LOT with my food!

And balance it out with superfood boosting meals like this.

As a thyroid cancer survivor I have struggled with dull, dry skin and thin brittle hair for years.

I take allllll the help I can get by taking vitamins, supplements, drinking lots of lemon water, and creating healthy recipes like this.

Make Me Beautiful Salad

Here’s the breakdown of ingredients and why they will create beauty from the inside out…

Salmon- high in Omega 3 fatty acids, protein, biotin, and supports keratin production

Walnuts- high in biotin, protein, vitamin E, boosts anti-inflammatory properties

Avocado- great source of fiber, vitamins C, E, and A, boosts collagen production

Eggs- high in protein, which boosts keratin production

Spinach- amazing source of iron and vitamin C which is great for collagen production

How to make this Make Me Beautiful Salad

First heat a skillet or Blackstone griddle over medium heat.

And add some olive oil and two seasoned salmon fillets.

I sprinkled kosher salt, pepper, and a little garlic herb seasoning on mine.

These will cook 7 to 9 minutes total, flipping halfway through.

While the salmon was cooking and cooling, I started by making the lemon vinaigrette.

Olive oil and lemon are also great for your body, both landing in the “superfoods” category”.

Add 1/4 cup olive oil, 2 tablespoons lemon juice, a little honey and Dijon mustard, kosher salt, and pepper to a bowl or mason jar.

Whisk or shake and your dressing is done 🙂

Assemble the salads starting with a bed of fresh spinach.

Add walnuts, a diced hardboiled egg, diced avocado, and feta cheese to each salad.

The feta is just because, well, I love feta 😉

Top each salad with a cooked salmon fillet that has been cooled slightly.

Ingredients

  • 2 salmon fillets
  • kosher salt, pepper, garlic herb seasoning blend, olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 6 cups fresh spinach
  • 2 hardboiled eggs peeled and diced
  • 1 large avocado diced
  • 1/4 cup walnuts
  • 1/3 cup feta cheese crumbles

Instructions

  1. Season the salmon fillets with kosher salt, pepper, and garlic herb seasoning. Preheat a skillet or Blackstone griddle over medium heat. Add some olive oil and the salmon. Cook 7 to 9 minutes total, flipping halfway through.

  2. As the salmon cools, make the dressing by adding 1/4 cup of the olive oil to a bowl along with the lemon juice, Dijon mustard, honey, kosher salt, and pepper. Whisk until combined.

  3. Divide the spinach between two bowls and top each with the cooked salmon, eggs, avocado, walnuts, and feta cheese. Serve with the homemade dressing.

    Note: These salads can be meal prepped, but top with the avocado right before serving as they will turn brown.
