Apple Bacon Spinach Salads
Apple Bacon Spinach Salads are an easy recipe for two!
It’s the perfect meal for when you’re feeling a little bit naughty, and a little bit nice.
You have the spinach, fruit, and homemade salad dressing to add to the “nice”.
But a little bacon and cheese to add a little “naughty” 😉
How to make Apple Bacon Spinach Salads
First we will make the bacon.
Just set a skillet over medium heat and use kitchen scissors to cut a few slices right into the skillet.
Cook this for 5 to 7 minutes, stirring a few times.
Then remove the bacon and set it aside.
You could easily use a store bought balsamic vinaigrette.
But making your own is so easy!
Put 1/4 cup olive oil into a jar or bowl.
Then add 2 tablespoons balsamic vinegar, and a teaspoon each of honey and Dijon mustard.
A little salt and pepper then just shake the jar or whisk the dressing in the bowl.
Now we can assemble the spinach salads 🙂
Divide the spinach between two bowls and start adding your toppings.
I went with diced apple, walnuts, dried cranberries, goat cheese, and the bacon!
Mix it up and add whatever toppings you prefer.
Don’t like goat cheese? Add some feta or cheddar.
Not a fan of walnuts? Add some croutons for that added crunch instead!
I mean, who really follows a recipe exactly anyway, right?!
Whatever toppings you choose, Apple Bacon Spinach Salads sure are gorgeous!
It’s a shame to mess up such a good looking salad.
But it’s bound to happen.
Just add the dressing, cut it all up and mix together, and dig in 🙂

Apple Bacon Spinach Salads
Apple Bacon Spinach Salads, an easy and healthy dinner recipe for two with a homemade balsamic vinaigrette dressing!
Ingredients
- 6 slices bacon
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey or sugar
- 1 teaspoon Dijon mustard
- kosher salt, pepper
- 4 cups spinach leaves
- 1 apple (I used Honeycrisp) diced
- 1/2 cup cheese of choice (I used crumbled goat cheese)
- 1/3 cup walnuts
- 1/3 cup dried cranberries
Instructions

Set a skillet over medium heat. Use kitchen scissors to cut the bacon into bite size pieces into the skillet. Cook 5 to 7 minutes, stirring a few times. Remove the bacon and set aside.

Put the olive oil, balsamic vinegar, honey or sugar, Dijon mustard, kosher salt, and pepper in a bowl and whisk until combined. (Can also use store bought balsamic vinaigrette in place of the homemade dressing)

Divide the spinach between two bowls or plates. Top each with the bacon, diced apples, cheese, walnuts, and cranberries. Serve with the balsamic vinaigrette over top.
