Chicken Apple Maple Mustard Salads

Chicken Apple Maple Mustard Salads is an amazing, healthy recipe with lots of fall flavors!

Usually I think bright flavors for spring and summer salads with lots of garden fresh ingredients.

Fall salads bring more harvest-y vibes, hence my reasoning for adding the cranberries, apples, and a maple mustard dressing.

Very similar to a honey mustard dressing, but with some autumn flare 😉

How to make Chicken Apple Maple Mustard Salads

Feel free to switch up the ingredients to fit your likes and dislikes.

Don’t like goat cheese? Maybe add feta or mozzarella.

Walnuts not your thing? Pecans or just some crunchy croutons can replace those.

The dressing is so simple!

But you could easily use a store bought honey mustard or even a balsamic vinaigrette if preferred.

To make the dressing add 1/2 cup olive oil, 1/4 cup Dijon mustard, 3 tablespoons maple syrup, kosher salt, and pepper to a bowl.

Then just whisk and it’s ready to go.

Next divide 6 to 8 cups of salad mix between 4 bowls or plates.

Or into containers if meal prepping.

This is just a bag of field greens, but I did add some fresh chopped spinach to it.

Then dice an apple and add to the salads.

I used a Honeycrisp apple because they are my favorite 🙂

If meal prepping you’ll want to cut the apples right before serving so they don’t brown.

Finally add some cooked, diced chicken, goat cheese, walnuts, and dried cranberries.

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup Dijon mustard
  • 3 tablespoons maple syrup
  • kosher salt, pepper
  • 6 to 8 cups chopped lettuce or salad mix of choice
  • 1 1/2 cups cooked, shredded or diced chicken
  • 1 to 2 Honeycrisp apples (depending on size) diced
  • 2/3 cup chopped walnuts or pecans
  • 2/3 cup crumbled goat cheese (or any cheese of choice)
  • 1/2 cup dried cranberries

Instructions

  1. Put the olive oil, Dijon mustard, maple syrup, kosher salt, and pepper in a bowl and whisk until combined.

    Note: You could also use a store bought honey mustard or balsamic vinaigrette dressing if preferred.

  2. Divide the lettuce or salad mix between 4 bowls or plates. Top each with the chicken, apples, walnuts, goat cheese, and cranberries. Drizzle the maple mustard dressing over top.
