Ingredients
  • 1/2 cup olive oil
  • 1/4 cup Dijon mustard
  • 3 tablespoons maple syrup
  • kosher salt, pepper
  • 6 to 8 cups chopped lettuce or salad mix of choice
  • 1 1/2 cups cooked, shredded or diced chicken
  • 1 to 2 Honeycrisp apples (depending on size) diced
  • 2/3 cup chopped walnuts or pecans
  • 2/3 cup crumbled goat cheese (or any cheese of choice)
  • 1/2 cup dried cranberries
Instructions
  1. Put the olive oil, Dijon mustard, maple syrup, kosher salt, and pepper in a bowl and whisk until combined.

    Note: You could also use a store bought honey mustard or balsamic vinaigrette dressing if preferred.

  2. Divide the lettuce or salad mix between 4 bowls or plates. Top each with the chicken, apples, walnuts, goat cheese, and cranberries. Drizzle the maple mustard dressing over top.
