Sausage Sweet Potato and Apple Hash

When I served this Sausage Sweet Potato and Apple Hash recipe to my husband last night, he commented on how “fall-ish” it looked.

I got WAAAYYYY too excited and started dancing around saying “Yay! That’s exactly what I was going for with this dish!”

He gets me and all my weirdness, and apparently has starting picking up on my fun made-up words like “Fall-ish” 🙂

By definition, a hash is a dish with diced up meat with potatoes.

My spin on this traditional dish was to use sweet potatoes and apples, you know, to make it feel like fall.

How to make Sausage Sweet Potato and Apple Hash

The meat I am using isn’t diced, though, it’s a pound of ground chicken sausage.

The chicken sausage will cook in a large skillet over medium heat for around 7 minutes.

As the sausage cooked, I diced two sweet potatoes with the skins and an onion.

Then, once the sausage was cooked, I removed it from the pan and set it aside for later.

And added some olive oil to the same skillet along with the diced sweet potatoes and onions.

Season with some kosher salt and pepper at this stage, and we will also season with a bit more kosher salt and pepper later.

This is called seasoning in layers.

After about 7 minutes the sweet potatoes and onions are ready for the diced apples.

I used two Honeycrisp apples for this dish.

Next add some seasonings such as dried thyme, paprika, cinnamon, cumin, and some crushed red pepper flakes to add some heat.

A little more kosher salt and pepper as well.

I added some water too, most of it evaporates, but it helps bring this dish together.

After about 5 minutes this is what you’ll see…

Almost ready…

Finally add the sausage back into the pan and cook for a few minutes to warm it through.

And the sausage will pick up all those yummy flavors in the pan.

At this point taste for seasoning and add whatever you think it needs…kosher salt, pepper, more crushed red pepper flakes… make it your own according to your taste.

Ingredients

  • 1 pound ground sausage (pork, turkey, or chicken)
  • 1 Tbsp olive oil
  • 1 onion diced
  • 2 sweet potatoes diced with skins on
  • kosher salt, pepper
  • 2 large apples (I used honeycrisp) diced with skins on
  • 1/2 Tbsp dried thyme leaves
  • 1/2 Tbsp paprika
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 to 1 tsp crushed red pepper flakes (depending on spice preference)
  • 1/4 cup water
  • Optional: green onions

Instructions

  1. Set a large skillet over medium heat and add the ground sausage. Cook 6 to 8 minutes, breaking it apart as it cooks. Once it's full cooked, drain excess grease and set the sausage aside on a plate or bowl.

  2. In the same skillet over medium heat add the olive oil, onion, diced sweet potato, kosher salt, and pepper. Cook 6 to 8 minutes, stirring occasionally.

  3. Add the diced apple, thyme, paprika, cinnamon, cumin, crushed red pepper flakes, kosher salt, and pepper and water. Cook 4 to 5 minutes, stirring occasionally.

  4. Add the sausage back into the pan with the sweet potatoes and apples. Cook 3 to 5 minutes and taste for seasoning. Add more of the seasonings, kosher salt, or pepper if needed.

  5. Serve with green onions sprinkled over top if desired.
