Sweet Potato Rice and Chorizo Bowls

Sweet Potato Rice and Chorizo Bowls were on tonight’s menu and this recipe did not disappoint at all!

For the kids I made regular rice and called it the home version of Chipotle, so they were thrilled.

I made the Uncle Ben’s Ready Rice that you microwave for 90 seconds, so really no extra work.

Sweet Potato Rice is quite possibly my newest food obsession.

And it’s not a bad obsession to have. It has much more flavor than regular rice, fewer calories, and less carbs.

Yes, yes cauliflower rice has even less calories and carbs, but sometimes us mid forty year old’s need to mix up our vegetable rice options đŸ˜‰

See, we aren’t boring and enjoy mixing things up a bit!

How to make Sweet Potato Rice and Chorizo Bowls

For the sweet potato rice cut some sweet potatoes into chunks, skin removed.

Then pulse a few times in the food processor until they are a rice like consistency.

Next the sweet potato rice goes into a large skillet over medium heat with some olive oil.

Season with chili powder, garlic powder, cumin, kosher salt, and pepper.

This will cook in the skillet for about 8 minutes.

Add some chopped cilantro and fresh squeezed lime juice at the end.

Divide the “rice” between four bowls or containers (if meal prepping).

Then in the same skillet add a pound of ground chorizo.

Cook the chorizo for about 5 to 8 minutes and break it apart as it cooks.

Chorizo is pretty awesome because it’s already perfectly seasoned.

Now all that’s left to do is make the Sweet Potato Rice Chorizo Bowls to your liking.

Putting your own spin on toppings makes this dish even more fun.

I set out cheese, sour cream, salsa, guacamole, hot sauce, and a few other taco-like fixings and everyone made their own bowl.

We even made it more of a fiesta and had some tortilla chips along with salsa and guacamole.

Sweet Potato Rice and Chorizo Bowls are a fun twist on a traditional taco rice bowls, the sweet potato rice saves calories and adds so much flavor!

Ingredients

  • 4 sweet potatoes medium size
  • 2 Tbsps olive oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • kosher salt, pepper
  • 1/2 cup chopped cilantro leaves
  • 1 to 2 Tbsps lime juice
  • 1 pound ground chorizo
  • Toppings of choice: shredded cheese, sour cream, salsa, avocado, tortilla chips, hot sauce

Instructions

  1. Cut the sweet potatoes into inch cubes (remove the skin). Place the sweet potato cubes in a food processor and pulse about 10 times or until it becomes a "rice" consistency.

    Note: This may need to be done in two separate batches depending on the size of your food processor.

  2. Set a large skillet over medium heat and add the olive oil. Once the olive oil is hot add the sweet potato rice, chili powder, garlic powder, cumin, kosher salt, and pepper. Cook over medium heat for 8 minutes, stirring occasionally.

  3. Stir in the chopped cilantro and lime juice, put the rice in a large bowl and set aside.

  4. In the same skillet cook the chorizo over medium heat 5 to 7 minutes, breaking it apart as it cooks.

  5. To make the bowls, divide the sweet potato rice and chorizo evenly between four bowls or containers (if meal prepping), add additional toppings of choice such as shredded cheese, sour cream, salsa, avocado, tortilla chips, and/or hot sauce.
