Air Fryer Breakfast Burritos
Air Fryer Breakfast Burritos were crispy on the outside and the blend of the melty cheese, sausage, and egg together was amazing on the inside!
This is one of those recipes that I dreamed up, knowing it had to be delicious.
But much to my surprise they were even BETTER than I had hoped 🙂
How to make Air Fryer Breakfast Burritos
So this dish is not one hundred percent cooked in the air fryer, it starts with a pound of breakfast sausage in a skillet over medium heat.
This will take around 6 to 8 minutes to cook, and use a wooden spatula to break it apart as it cooks.
Once the sausage is cooked set it aside on a plate or bowl.
Then you can use the same skillet to make the scrambled eggs.
Beat 8 eggs in a bowl along with some milk, kosher salt, and pepper.
Next add some butter to the same skillet, but this time over medium low heat.
That’s the secret to fluffy, perfectly cooked scrambled eggs.
Low and slow is the way to go 😉
Making the Air Fryer Breakfast Burritos…
Setting up a burrito assembling station right next to the air fryer will make this process go a bit more smoothly.
Everything you need is right there for you.
Start with a large burrito size tortilla laying flat.
Add some shredded cheese and the cooked breakfast sausage.
Next up is the scrambled eggs and a drizzle of maple syrup right over top of the eggs..
Once it was time to fold these burritos I called for reinforcements with the camera.

Then fold the top over the filling…
One final roll over and you have a perfect little burrito that’s ready for the air fryer.
Believe me, I am no professional at this burrito rolling.
So if I can do it, so can you!
And if they are imperfect like mine, hey, they still taste great 🙂
Ready for the Air Fryer!
Into the air fryer basket they go with a spray of olive oil cooking spray on both sides.
Doing the spraying in the air fryer eliminates a big mess on your counter.
Set the air fryer to 390 degrees for 10 minutes and they are golden brown to perfection and breakfast (or breakfast for dinner) is served!
Repeat with remaining burritos and they will be perfectly cooked by the time you’re ready for seconds.
Bonus points for these Air Fryer Breakfast Burritos being just as amazing if you reheat them the next day.
We were lucky enough to have some leftover and they were perfect reheated in the microwave.

Air Fryer Breakfast Burritos
Breakfast burritos criped in the air fryer, a yummy breakfast or breakfast for dinner
Ingredients
- 1 pound ground breakfast sausage
- 8 eggs
- 1/4 cup milk
- kosher salt, pepper
- 1 Tbsp butter
- 6 large burrito size tortillas
- 2 cups shredded cheese of choice
- 6 Tbsps maple syrup
- olive oil cooking spray
Instructions

Set a skillet over medium heat and add the ground breakfast sausage. Cook 6 to 8 minutes, breaking it apart as it cooks. After it's fully cooked, set aside on a plate.

In a bowl add the eggs, milk, kosher salt, and pepper. Beat with a fork for one minute.

In the same skillet over medium low heat add the butter. When the butter is melted add the eggs. Cook 4 to 5 minutes, stirring with a spatula, until the eggs are cooked and scrambled.

Set up the burrito wrapping station with the tortillas, cheese, sausage, scrambled eggs, and maple syrup.

In the center of each tortilla add some cheese, sausage, scrambled eggs, and one Tbsp maple syrup per burrito. Fold the sides in over the filling, fold the front part over the filling, and roll into a burrito (picture examples in post above).

Place two to three burritos in the air fryer basket and spray both sides with the olive oil cooking spray. Set the air fryer to 390 degrees for 8 to 10 minutes. Repeat with another batch or two of remaining burritos.
