Well last night my air fryer got to make a comeback with Air Fryer Chicken Chimichangas and they were so SO good!
I’ve been so obsessed with grilling and smoking things lately that I have neglected my air fryer.
Poor little thing just has been sitting there all lonely.
How to make Air Fryer Chicken Chimichangas
I had some leftover grilled chicken that I diced up and mixed with shredded cheddar cheese and salsa for the filling.
Setting up a little chimichanga wrapping station is super easy.
Have a bowl with olive oil and chili powder mixed together along with a brush.
Two large flour tortillas and the yummy chicken filling all ready to go on a cutting board.
Put half the chicken mixture in the center of a flour tortilla.
When wrapping the chimichanga fold in the sides, fold the front part over top and then fold the back part over top.
Use one finger to hold the seam in place and with your other hand brush it with the olive oil.
Place in the air fryer, seam side down, and brush the top and sides with the olive oil.
Set the air fryer for 12 to 14 minutes at 390 degrees.
No need to flip or anything 🙂
These Air Fryer Chicken Chimichangas come out of the air fryer crispy, golden brown, and delicious!
Topping ideas are endless with chimichangas!
We went with lettuce, cilantro, sour cream, and a bit more salsa.
You could also go with guacamole, hot sauce, or even some pickled jalapenos too!
