Bacon Pineapple Cauliflower Fried Rice

The flavors of this Bacon Pineapple Cauliflower Fried Rice are unbelievably delicious and everyone is sure to love this recipe!

If I were a betting girl, I would place a pretty hefty amount to bet that no one would even be able to tell this was cauliflower rice.

I’m not telling you to trick the husband and kids, but hey, if you do decide to trick them I won’t judge 😉

I mean, anything with bacon can’t be a bad thing, right?!

How to make Bacon Pineapple Cauliflower Fried Rice

This is 10 slices of thick cut bacon.

First I set my large skillet over medium heat and use kitchen scissors to cut them into bite size pieces right into the skillet.

It’s much easier than frying up strips and crumbling them.

Then you’ll want to remove the bacon and place on paper towels to drain.

Leave about 2 Tbsps of the bacon grease in the skillet to cook a diced onion for a few minutes.

Then add two bags of frozen cauliflower rice and a frozen bag of peas and carrots that have all been thawed.

This will cook for about five minutes, stirring a few times.

No worries if you didn’t have time to thaw them, just add a few extra minutes of cooking.

Now comes the yummy asian flavors that will make your kitchen smell amazing!

Soy sauce, ginger paste, and garlic paste go into the skillet and cook for five more minutes.

Ginger and garlic paste are ingredients I use quite often.

Garlic Paste

They are fresh and easy to use, and a huge time/stress reliever for me.

If you prefer, though, you can certainly use fresh minced ginger and garlic.

Two beaten eggs go into this rice and after a few minutes of stirring them in and once they are cooked, all that’s left to do is add the stars of this dish…

The cooked bacon and a can of pineapple tidbits that’s been drained.

Ingredients

  • 10 slices bacon
  • 1 onion diced
  • 2 12 oz bags frozen cauliflower rice thawed
  • 1 12 oz bag frozen peas and carrots thawed
  • 6 Tbsps soy sauce
  • 2 Tbsps garlic paste or minced garlic
  • 2 Tbsps ginger paste or minced ginger
  • 2 eggs beaten
  • 1 15 oz can pineapple tidbits drained
  • Optional: green onions, Sriracha, extra soy sauce

Instructions

  1. Set a large skillet over medium heat, use kitchen scissors to cut the bacon into the skillet. Cook 5 to 7 minutes until brown. Remove the bacon from the skillet onto paper towels and set aside. Drain most of the bacon grease, leaving about 2 Tbsps of grease in the skillet.

  2. Add the diced onion and cook 3 to 4 minutes, stirring occasionally. Add the thawed cauliflower rice and the peas and carrots to the skillet. Cook 5 minutes, stirring occasionally.

  3. Add the soy sauce, garlic, and ginger. Cook 5 more minutes, stirring as it cooks.

  4. Add the beaten egg and cook 2 to 3 more minutes, stirring, until the egg is cooked through.

  5. Add the cooked bacon and pineapple, stir until evenly mixed in and warmed through. Serve with green onions, Sriracha and extra soy sauce on the side if desired.
