Bacon Pineapple Cauliflower Fried Rice
The flavors of this Bacon Pineapple Cauliflower Fried Rice are unbelievably delicious and everyone is sure to love this recipe.
Plus I have provided skillet AND Blackstone griddle directions!
How to make Bacon Pineapple Cauliflower Fried Rice
First I set my large skillet over medium heat and use kitchen scissors to cut 10 slices of bacon into bite size pieces right into the skillet or griddle.

Then you’ll want to remove the bacon and place on paper towels to drain.
Leave about 2 tablespoons of the bacon grease in the skillet or griddle to cook a diced onion for a few minutes.

Then add two bags of frozen cauliflower rice and a frozen bag of peas and carrots that have all been thawed.
This will cook for about five minutes, stirring a few times.

Soy sauce, ginger paste, and garlic paste go into the skillet and cook for five more minutes.

They are fresh and easy to use, and a huge time/stress reliever for me.

Then add two beaten eggs to the rice and after a few minutes of stirring them in and once they are cooked, all that’s left to do is add the stars of this dish…
Next, the cooked bacon and a can of pineapple tidbits that’s been drained.

I topped our Bacon Pineapple Cauliflower Fried Rice with some sliced green onions for a pretty pop of color.

And since we are spice fanatics in our house we added a bit of Sriracha.

Bacon Pineapple Cauliflower Fried Rice
A one pan yummy dish of cauliflower fried rice with bacon and pineapple
Ingredients
- 10 slices bacon
- 1 onion diced
- 2 (12-ounce) bags frozen cauliflower rice thawed
- 1 (12-ounce) bag frozen peas and carrots thawed
- 6 tablespoons soy sauce
- 2 tablespoons garlic paste or minced garlic
- 2 tablespoons ginger paste or minced ginger
- 2 eggs beaten
- 1 (15-ounce) can pineapple tidbits drained
- Optional: green onions, Sriracha, extra soy sauce
Instructions

Set a large skillet or your Blackstone griddle over medium heat, use kitchen scissors to cut the bacon. Cook 5 to 7 minutes. Remove the bacon onto paper towels and set aside. Drain most of the bacon grease, leaving about 2 tablespoons of grease in the skillet or griddle.

Add the diced onion and cook 3 to 4 minutes, stirring occasionally. Add the thawed cauliflower rice and the peas and carrots. Cook 4 to 5 minutes, stirring and mixing occasionally.

Add the soy sauce, garlic, and ginger. Cook 3 to 5 more minutes, stirring as it cooks.

Add the beaten egg and cook 2 more minutes, stirring, until the egg is cooked through.

Add the cooked bacon and pineapple, stir until evenly mixed in and warmed through. Serve with green onions, Sriracha and extra soy sauce on the side if desired.
