I made this Bang Bang Salmon with Cauliflower Rice recipe with light mayo to make it extra light and healthy 🙂

I made some Air Fryer Bang Bang Shrimp a few days ago and was excited to try it on salmon.

SO yummy!

How to make Bang Bang Salmon with Cauliflower Rice

The Bang Bang Sauce is just mayo (or light mayo), sweet chili sauce, and Sriracha.

Yes, it’s that simple.

Just whisk it together and brush some over some salmon fillets.

Add a little salt and pepper and the salmon is ready to be cooked.

In the air fryer it takes about 13 to 15 minutes at 400 degrees.

In the oven it takes 13 to 15 minutes as well.

I had a bag of frozen cauliflower rice that I cooked in the microwave according to the package directions.

Then just place the salmon right over the rice.

Now comes the BEST part…the sauce!!!

Now it may look from this picture that I used it sparingly, no way!

I started with this and kept adding to it and mixed it all around with the cauliflower rice.

It’s also really good with a squeeze of lemon over top 🙂

I tend to make more than I know my family will eat to have leftovers for lunch the next day.

These little 2 oz cups with lids are perfect for packing the sauce on the side.

And here I am, trying to devour this amazing Bang Bang Salmon with my sweet (and somewhat spoiled) baby boy on my lap.

He thinks it looks good too I believe 🙂

A homemade bang bang sauce served with yummy salmon over cauliflower rice

Ingredients

  • 1/2 cup mayo (or light mayo)
  • 1/3 cup sweet chili sauce
  • 2 Tbsps Sriracha (or more if you like it spicy)
  • 3/4 pound salmon (cut into 2 fillets)
  • kosher salt, pepper
  • 1 14 oz bag frozen cauliflower rice
  • Optional: sliced green onions, lemon wedge

Instructions

  1. In a small bowl whisk together the mayo, sweet chili sauce, and Sriracha to make the Bang Bang Sauce.

  2. Brush some of this mixture onto the salmon. Sprinkle salmon with kosher salt and pepper.

  3. Cook the salmon according to one of these methods:

    In the oven: Place the salmon skin side down onto a lined baking sheet. Bake in a 400 degree oven for 13 to 15 minutes.

    In the air fryer: Place the salmon in the air fryer basket skin side down. Set the air fryer to 400 degrees for 13 to 15 minutes.

  4. Cook the cauliflower rice according to package directions. Divide the rice evenly onto two plates. Place a piece of salmon over the rice. Drizzle with more Bang Bang sauce and green onions and lemon wedge if desired.
