Peanut Chicken Lettuce Wraps
These Peanut Chicken Lettuce Wraps are my newest recipe creation and they were so amazingly flavorful!
These just may be on the menu for next week’s dinner too because I am drooling a little just thinking about them.
I have quickly become obsessed with lettuce wraps.
I am looking for anything quick and easy to make lately.
It’s the end of the school year and spring fever is in full effect in my classroom.
Therefore I’m a bit more exhausted (or one might say cranky 😉 ) when I get home.
This recipe is a winner because it’s less than 30 minutes, and only uses one pan 🙂
How to make Peanut Chicken Lettuce Wraps
In a skillet over medium heat just add some sesame oil. diced onions and red bell pepper, and a shredded carrot.
This cooks for about 5 minutes.
Next add a pound of ground chicken, ginger paste, and garlic paste.
Cook another 5 minutes, breaking the chicken apart as it cooks.
All sorts of yummy goodness goes into the pan next to complete this fabulous meal.
Peanut butter, soy sauce, Hoisin sauce, and honey get mixed in and this will cook a few more minutes.
Carefully peel some lettuce leaves, either boston or butter lettuce are my favorites.
After the chicken cools slightly fill the lettuce leaves and top with chopped peanuts and green onions.
If you add the chicken when it’s too hot the lettuce will wilt a bit.
The crunch from the crisp lettuce is what makes a lettuce wrap super awesome, and no one likes wilty lettuce.
My husband and I also drizzled some Sriracha over top of our Peanut Chicken Lettuce Wraps to add a little spice.

Peanut Chicken Lettuce Wraps
A delicious peanut chicken wrapped in crisp, refreshing lettuce wraps
Ingredients
- 1 Tbsp sesame oil
- 1 onion diced
- 1 red bell pepper diced
- 1 carrot shredded
- 1 Tbsp garlic paste or minced garlic
- 1 Tbsp ginger paste or minced ginger
- 1 pound ground chicken
- 4 Tbsps peanut butter
- 3 Tbsps hoisin sauce
- 2 Tbsps soy sauce
- 1 Tbsp honey
- 1 head butter or boston lettuce
- Optional toppings: chopped peanuts, green onions, Sriracha
Instructions

In a large skillet over medium heat add the sesame oil, onion, red pepper, and carrot. Cook 4-5 minutes, stirring occasionally.

Add the garlic paste, ginger paste, and ground chicken. Cook 4-5 minutes, stirring occasionally and breaking apart the ground chicken.

Add the peanut butter, hoisin sauce, soy sauce, and honey. Cook 4-5 more minutes, stirring occasionally.

Let cool slightly and fill the lettuce leaves with the chicken mixture. Top with chopped peanuts, green onions, and/or Sriracha if desired.
