These Chicken Bacon Ranch Lettuce Wraps are light, refreshing, and completely delicious!
If you’re a bread lover like me the idea of a lettuce wrap may sound lame.
Believe me, I was not quick to want to jump on this low carb bandwagon at all.
However, I have to say lettuce wraps have quickly become my newest obsession.
How to make Chicken Bacon Ranch Lettuce Wraps
These wraps start with 3 cups of cooked, diced chicken.
I grilled mine, but you could easily use a store bought rotisserie chicken or Simple Shredded Chicken for Meal Prep.
Once the chicken is diced just toss it with some ranch dressing.
While my chicken cooled from the grill I made the bacon using an easy trick.
Cut the bacon into bite size pieces directly into a skillet over medium heat.
It takes about 5-7 minutes.
Drain on a paper towel.
Now you’re ready to fill the lettuce wraps.
Bibb lettuce or Boston lettuce works best in my opinion for lettuce wraps.
I cut the core off and separate the leaves to use for the wraps.
Start with the chicken first in the lettuce wraps.
Then top with cheese, bacon, and avocado.
Drizzle a little more ranch over top if you prefer and enjoy!
Confession, I did add more bacon than what’s shown in the picture.
A little more bacon seems to make everything better, right?!
Chicken Bacon Ranch Lettuce Wraps are even good the next day for lunch.
I packed some just like this (minus the avocado) in a container and they held up really well 🙂
