Ingredients
  • 6 slices bacon
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or sugar
  • 1 teaspoon Dijon mustard
  • kosher salt, pepper
  • 4 cups spinach leaves
  • 1 apple (I used Honeycrisp) diced
  • 1/2 cup cheese of choice (I used crumbled goat cheese)
  • 1/3 cup walnuts
  • 1/3 cup dried cranberries
Instructions
  1. Set a skillet over medium heat. Use kitchen scissors to cut the bacon into bite size pieces into the skillet. Cook 5 to 7 minutes, stirring a few times. Remove the bacon and set aside.

  2. Put the olive oil, balsamic vinegar, honey or sugar, Dijon mustard, kosher salt, and pepper in a bowl and whisk until combined. (Can also use store bought balsamic vinaigrette in place of the homemade dressing)

  3. Divide the spinach between two bowls or plates. Top each with the bacon, diced apples, cheese, walnuts, and cranberries. Serve with the balsamic vinaigrette over top.
