
Ginger Peanut Chicken Bites
An easy to make dinner that’s jam packed with flavor is the perfect recipe description for Ginger Peanut Chicken Bites.
There’s no shame in using store bought sauces to make dinnertime a little less stressful to prepare.
And that’s exactly my thinking behind this dish.
Just a few ingredients makes for the perfect weeknight meal recipe 🙂

How to make Ginger Peanut Chicken Bites
First cut two pounds of chicken thighs in bite size pieces and place them in a gallon size plastic bag.
Yes, you can use chicken breasts… but chicken thighs are not only more budget friendly, they are more tasty in my opinion.
Then add 1/2 cup of ginger salad dressing, soy sauce, and fresh minced garlic.
Massage the bag until combined and marinate in the fridge for a few hours or overnight.

Next set a large skillet over medium heat and add some olive oil.
Then add the chicken and a small amount of kosher salt and pepper.

Cook the chicken in the skillet for 7 to 9 minutes.
Then add a cup of store bought peanut sauce and cook a few more minutes.
You can find this sauce in the Asian section of most grocery stores.

I served mine over cooked Jasmine rice.
You can make your own rice or take even more help from the store and use the microwave rice pouches.
Also add some lime juice, more peanut sauce, and sriracha for a some added heat.

Chopped peanuts bring some texture and crunch and cilantro brings a little freshness.

Ginger Peanut Chicken Bites
Ginger Peanut Chicken Bites is an easy dinner recipe with chicken thighs and an easy marinade with ginger dressing served over rice!
Ingredients
- 2 pounds boneless skinless chicken thighs (or breasts)
- 1/2 cup ginger salad dressing (I used Makoto)
- 3 tablespoons soy sauce
- 5 to 6 cloves garlic minced
- 2 tablespoons olive oil
- kosher salt, pepper
- 1 cup peanut sauce (Asian section of grocery store)
- Optional: cooked Jasmine rice, chopped peanuts, lime wedges, cilantro, sriracha, more peanut sauce
Instructions

Set a large skillet over medium heat and once hot add the olive oil, chicken bites, and a small amount of kosher salt and pepper. Cook 7 to 9 minutes, stirring a few times.

Add the peanut sauce and cook another 2 to 3 minutes. Serve over rice if desired and with chopped peanuts, lime wedges, and cilantro, also add sriracha or more peanut sauce if desired.
