Jalapeno Popper Chicken Biscuit Cups

Jalapeno Popper Chicken Biscuit Cups are hearty enough to be considered a dinner recipe, but also fun enough to be an appetizer or game day snack!

Flattened biscuit dough (you know, the kind that comes in a tube) in a muffin tin and filled with delicousness.

I suppose filling options are endless (as my mind is already racing with MANY more ideas).

But for these I went with a cheesy chicken jalapeno filling with ranch.

I wish I could have captured the look of amazement on my husband’s face as I pulled these from the oven… he was quite excited to say the least 🙂

How to make Jalapeno Popper Chicken Biscuit Cups

You’ll need an 8 count of jumbo biscuits.

Also a jalapeno or two, green onions, ranch dressing, and some shredded cheese.

The jalapenos do not make these spicy because I removed the seeds.

But you can leave them out to make them more kid friendly if desired.

Also some chopped, cooked chicken.

I grilled chicken the night before I made these for dinner and just made extra chicken to prepare for this meal.

This is just part of my whole ‘work smarter not harder’ motto when it comes to meal planning.

So we have about 1 1/2 cups of chopped, cooked chicken.

And I just added a cup of the cheese, 3 sliced green onions, diced jalapenos (seeds removed or leave some in for spice), and a cup of ranch dressing.

Cooked and crumbled bacon is optional.

I cooked 5 slices in my air fryer at the last minute and decided to add it.

Then just mix the filling together in the bowl.

Next flatten the biscuits with a rolling pin.

Spray 8 cups of a muffin tin with nonstick spray, and form the flattened biscuits to the muffin tin cups.

Finally fill the biscuit cups with the chicken filling.

You’re really gonna have to pack that filling in and pile as high as you can.

You may doubt if it will all fit, but I promise it will.

Bake in a 400 degree oven for 19 to 22 minutes.

And THIS is what will emerge from the oven to totally WOW your family 🙂

Let them cool slightly before removing them.

Ingredients

  • 1 1/2 cups cooked, chopped chicken
  • 1 to 2 jalapeno peppers seeds removed and minced
  • 1 cup shredded cheese of choice (I used Mexican blend)
  • 3 green onions chopped
  • 1 cup ranch dressing
  • 4 to 5 slices bacon (optional) cooked and crumbled
  • 1 8 count tube/ package jumbo biscuits
  • nonstick spray

Instructions

  1. Put the chicken, jalapenos, cheese, green onions, ranch dressing, and bacon (if using) in a bowl. Mix until combined.

  2. Use a rolling pin to flatten each biscuit. Spray 8 cups of a muffin tin with nonstick spray and place each flattened biscuit in the cups. Press slightly to form the shape of the muffin cups.

  3. Use a spoon to fill each biscuit with the chicken mixture (really pile the filling high and press down if needed, it will all fit). Bake in a 400 degree oven for 19 to 22 minutes.
