Chicken and Spinach Wontons

Chicken and Spinach Wontons

The inspiration behind the recipe for these Chicken and Spinach Wontons came from my daughter.

She originally wanted to make homemade pizza rolls.

However she’s unique in that she always orders chicken and spinach on her pizzas.

So my wheels started turning and I came up with a snack/appetizer that was perfect for her.

In the past I have made Homemade Pizza Rolls using egg roll wrappers.

But I wanted these to be more bite size.

How to make Chicken and Spinach Wontons

Begin by dicing an onion and cutting a pound of chicken into bite size pieces.

diced onion and chicken

Then in a skillet over medium heat add the onion along with some olive oil.

After the onion cooks for a few minutes, add the chicken.

Season the chicken with kosher salt, pepper, and crushed red pepper flakes.

Cook for another 5 minutes or so, stirring occasionally.

Italian seasoning would also be a great addition!

Adding some garlic and spinach is the next step.

I bought a 10 ounce bag of spinach, which was very big.

However, spinach cooks down so much that I promise it will fit.

Add the spinach a few handfuls at a time and after it cooks down, add a few more handfuls.

adding spinach

Once all the spinach is added, cook another few minutes and then let the mixture cool.

When it’s cooled slightly, add two cups of shredded mozzarella cheese.

So now we are ready to make some wontons!

Place a spoonful of the chicken and spinach mixture on the upper half of a wonton wrapper.

Then dip your finger in water and trace the edges. This will seal the wonton.

Fold it over and press the edges to seal, trying to get out any air.

Repeat with the rest of the wontons.

Frying the wontons…

If you have a deep fryer…lucky you đŸ™‚ !

If not, fill a small saucepan about two inches deep with vegetable oil and set to medium heat.

After 5 or 6 minutes check to make sure the temp is 350 degrees.

Fry the wontons a few at a time for 45 seconds to 1 minute per side.

Using tongs is a great tool for this task.

Remove from the oil and place on paper towels to drain the extra oil.

Sprinkle right away with grated parmesan cheese so it sticks.

Probably the most difficult part is waiting for Chicken and Spinach Wontons to cool off enough before devouring them!

They are super good dipped in pizza sauce or ranch dressing đŸ™‚

Ingredients

  • 1 onion
  • 1 pound chicken
  • 1 Tbsp olive oil
  • kosher salt, pepper, crushed red pepper flakes
  • 2 Tbsps garlic paste or minced garlic
  • 10 oz fresh spinach
  • 2 cups shredded mozzarella cheese
  • 30 wonton wrappers
  • vegetable oil (enough to fill a small saucepan 2 inches deep)
  • 1/4 cup grated parmesan cheese
  • 1 cup pizza sauce

Instructions

  1. Dice the onion and cut the chicken into bite size pieces.

  2. In a skillet over medium heat add the olive oil and onion. Cook 3 to 5 minutes, stirring occasionally. Add the chicken and season with kosher salt, pepper, and crushed red pepper to taste. Cook 5 minutes, stirring occasionally.

  3. Add the garlic and handfuls of the spinach at a time. Stir in between adding more spinach, it will cook down and add more spinach. Once all the spinach has been added, cook 5 more minutes and remove from heat.

  4. Once this mixture is cool, add the shredded cheese and stir until evenly combined.

  5. Lay each wonton wrapper flat and diagonal. Place a spoonful of the chicken spinach mixture in the upper half portion. Dip your finger in water and trace the edges of the wonton wrapper. Fold the bottom half over the filling and press the edges to seal. Repeat with remaining wontons.

Note: Picture examples in post above.

  6. Pour enough vegetable oil in a small saucepan, enough to fill it 2 inches deep. Set it over medium heat and wait 5 to 6 minutes. Once the temperature reaches 350 degrees (using an instant read thermometer) carefully add three to four wontons at a time.

  7. Fry the wontons 45 seconds to 1 minute per side, remove and place on paper towels to drain excess oil. Sprinkle with parmesan cheese. Repeat with remaining wontons.

  8. Serve with pizza sauce for dipping.
