Smoked Peach Chicken Thighs

Smoked Peach Chicken Thighs

Smoked Peach Chicken Thighs was our fabulous dinner recipe last night.

Peach is a key flavor in the middle of summer.

In fact my son and I are just about to go get some peach ice cream… right after I am done sharing these with you.

I had some homemade peach jelly left and put it to good use in this peach glaze for the chicken.

How to make Smoked Peach Chicken Thighs

The glaze is made by whisking together the peach jelly, balsamic vinegar, soy sauce, honey, garlic, and crushed red pepper flakes.

I know, I know…it seems like a crazy combo of flavors.

Pinky promise though, it’s amazing!

Once you get the peach glaze ready to go, put about a cup of it in a gallon size plastic bag with 5 to 6 pounds of chicken thighs.

Massage the bag until evenly combined and marinate the chicken in the fridge for several hours or even overnight.

Then put the chicken on a smoker or Traeger pellet grill set to 250 degrees and sprinkle with kosher salt and pepper.

Total cook time will be about 2 1/2 to 3 hours, and flip them halfway through.

Also brush with more of that peach glaze a few times.

As you can see, our entire meal was done on the smoker.

You know what that means, right?!

NO DISHES…WOOO HOOO!

Oh, and of course yummy smoke flavor and deliciousness!

I always use my instant read thermometer to check that they are fully cooked.

Make sure the thighs have an internal temp of 170 degrees and they are ready 🙂

Serve these Smoked Peach Chicken Thighs with the rest of the peach glaze for dipping 🙂

Ingredients

  • 1 1/4 cups peach jelly
  • 1/3 cup soy sauce
  • 1/3 cup balsamic vinegar
  • 1/3 cup honey
  • 1 Tbsp garlic paste or fresh minced garlic
  • 1 tsp crushed red pepper flakes (optional for spice)
  • 5 to 6 pounds chicken thighs (approx 10 thighs)
  • kosher salt, pepper

Instructions

  1. In a bowl, whisk together the peach jelly, soy sauce, balsamic vinegar, honey, garlic, and crushed red pepper flakes (if using).

  2. Trim extra fat from chicken thighs if needed, place the chicken thighs in a gallon size plastic bag and pour 1 cup of the peach glaze over the chicken. Set the remaining peach mixture aside. Close the bag and massage the chicken so it’s evenly coated. Place in the fridge and marinate several hours or overnight.

  3. Set your smoker to 250 degrees and place the chicken in the smoker, sprinkle with kosher salt and pepper. Smoke them 1 1/2 hours and flip them over, smoke another 1 to 1 1/2 hours, brush more of the peach glaze on the chicken a few times throughout cooking.

Note: Check to make sure internal temp is 170 degrees.

  4. Serve with remaining peach glaze for dipping.
