Crispy Baked Old Bay Chicken is a must try recipe that will hopefully become one of your favorites as well 🙂

This easy method of baking chicken thighs has quickly become one of my new favorite meals.

It’s quick, easy, has only three ingredients, and the trick for creating the crispiest skin is amazing!

How to make Crispy Baked Old Bay Chicken

This recipe starts with two pounds of chicken thighs.

Typically two pounds is 5 or 6 thighs, but these guys were monsters!

Only four came in the pack. but it worked out well because I was serving four people.

Okay, so part of my secret trick for the crispiest baked skin is patting the chicken dry with paper towels.

The next part is mixing the Old Bay seasoning with baking powder.

The baking powder helps dry up any moisture, creating that crunch.

Rub the seasoning and baking powder on all sides of the chicken and place them skin side up on a wire baking rack over a lined baking sheet.

Make sure to line that baking sheet to make for easy clean up.

I also sprinkled more Old Bay over top.

Time for the Oven

Another part of the crispy skin method is placing this into a 475 degree oven for 15 minutes.

Then lower the heat to 425 and cook an additional 30 minutes.

As it bakes, you can actually hear the skin sizzling and getting all crispy!

Crispy Baked Old Bay Chicken is only one possibility of using this method.

I have made this with BBQ seasoning, Caribbean Jerk seasoning, and even cajun seasoning.

Crazy enough my daughter doesn’t like the skin at all, so she just gives hers to my husband, who is kind of a chicken skin junkie.

So he especially loves when I make this meal.

It’s also the perfect meal for a busy weeknight because it takes five minutes to prepare and the oven does the rest 🙂

Crispy Baked Old Bay Chicken

Ingredients

  • 2 pounds chicken thighs (4 to 6 thighs)
  • 1 1/2 Tbsps Old Bay seasoning (plus a little more to sprinkle over top)
  • 1 tsp baking powder

Instructions

  1. Pat both sides of the chicken thighs dry with paper towels.

    Note: If you prefer less skin, trim the excess skin on the bottom of each thigh using kitchen scissors leaving just the skin on the top

  2. Combine the Old Bay seasoning and baking powder. Rub on both sides of the chicken thighs. Sprinkle more Old Bay seasoning over top if desired.

  3. Place the chicken skin side up on a wire rack over a lined baking sheet. Put in a 475 degree oven for 15 minutes. Reduce the oven temp to 425 and cook for an additional 30 minutes.
