Blackstone Korean Chicken Bites

A recent trip to New York was the inspiration behind this recipe for Blackstone Korean Chicken Bites!

We went to Koreatown and splurged on alllllll the delicious food there.

This simple griddle recipe of flavorful chicken bites with an easy dipping sauce brought back some food memories for sure.

Of my flat top griddle recipes, this is pretty perfect for beginners… but yummy enough that even you seasoned Blackstone griddlers will have to try it.

How to make Blackstone Korean Chicken Bites

First we will make the chicken marinade in a bowl.

Start with 3 tablespoons of gochujang chili paste, which can be found in the Asian section of the store or on Amazon.

Then add 3 tablespoons soy sauce, a tablespoon each of lime juice and honey, and a few cloves of finely minced garlic.

Whisk until combined.

Put 1/2 cup of mayo in another bowl and add some of the marinade, just according to your taste and spice level.

Set this aside to use for a dipping sauce.

Then cut about 2 pounds of chicken thighs (or chicken breasts) into bite size pieces and put them in a gallon size plastic bag with the remaining marinade.

Toss until coated and marinate in the fridge for a few hours.

Then you can head out to the griddle along with some sesame seeds and cilantro, these are optional toppings.

Preheat your Blackstone griddle or flat top grill to medium heat for a few minutes.

Then drizzle some cooking oil of choice and the seasoned chicken bites.

Cook together, mixing with hibachi spatulas a few times, for 8 to 10 minutes.

Garnish with the sesame seeds and cilantro if desired.

Serve Blackstone Korean Chicken Bites with the dipping sauce on the side 🙂

Other serving suggestion would be over rice with the sauce mixed in, as tacos, to top a salad, and you can even meal prep with these chicken bites.

Blackstone Korean Chicken Bites

Blackstone Korean Chicken Bites is an easy griddle recipe with big flavor, gochujang chili paste creates an amazing and simple chicken dinner!

Ingredients

  • 3 tablespoons gochujang chili paste (Asian section of grocery store or Amazon)
  • 3 tablespoons soy sauce
  • 4 to 5 cloves garlic finely minced
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 cup mayo
  • 2 to 2 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • cooking oil of choice
  • Optional: sesame seeds, cilantro

Instructions

  1. Put the gochujang, soy sauce, garlic, lime juice, and honey in a bowl and whisk until combined.

  2. Mix a few spoonfuls of this mixture in another bowl with the mayo, store in the fridge until ready to use as a dipping sauce.

  3. Put the chicken into a gallon size plastic bag with the remaining gochujang mixture. Massage the bag until evenly coated, marinate in the fridge for a few hours or overnight.

  4. Preheat your griddle to medium heat for a few minutes. Add some cooking oil and the seasoned chicken bites. Cook 8 to 10 minutes, mixing together a few times with hibachi spatulas.

  5. Garnish with sesame seeds and cilantro if desired. Serve with the dipping sauce on the side.
