Caribbean Jerk Baked Chicken
When I think of Caribbean Jerk, I think warmth and sunshine. So maybe that’s why I wanted to make this Caribbean Jerk Baked Chicken recipe.
Use a store-bought seasoning or if you want to go all out, by all means make this Caribbean Jerk Seasoning.

How to make Caribbean Jerk Baked Chicken
Marinate the chicken legs in some soy sauce, brown sugar, lime juice, and Caribbean Jerk seasoning.
I used a plastic gallon size baggie and place it in the fridge overnight to marinate.
You could also add ground red pepper for some added spice.
When you’re ready to bake, simply place the chicken in a dish lined with foil.
Sprinkle all sides with more jerk seasoning and some kosher salt and pepper.

Bake in a 400 degree oven for 45-50 minutes.
Check to make sure it’s at least 170 degrees with a thermometer.
Especially for taking a few shortcuts from the authentic Caribbean Jerk 🙂
I recommend squeezing a little extra lime juice over top of your Caribbean Jerk Baked Chicken.

Caribbean Jerk Baked Chicken
A simple and delicious weeknight meal that everyone will love
Ingredients
- 6 chicken legs
- 2 1/2 tablespoons Caribbean Jerk seasoning (I used Savory Spice)
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Optional for spice: 1/2 to 1 teaspoon ground red pepper
- kosher salt, pepper
- Optional: lime wedges to squeeze over top
Instructions

In a bowl or plastic gallon size bag combine the chicken, 1 1/2 tablespoons of the Caribbean Jerk seasoning, brown sugar, soy sauce, and lime juice and ground red pepper if using. Toss until evenly coated, marinate at least 1 hour or overnight.

Place the chicken in a baking dish (line with foil for easy cleanup). Sprinkle all sides with remaining Caribbean Jerk seasoning, kosher salt, and pepper.

Bake in a 400 degree oven for 45-50 minutes. Serve with lime wedges to squeeze over top if desired.
Note: Check the chicken with a thermometer to make sure it is at 170 degrees.
