When I think of Caribbean Jerk, I think warmth and sunshine. So maybe that’s why I wanted to make this Caribbean Jerk Baked Chicken.

It’s officially spring….buuuut… spring hasn’t quite sprung just yet.

Still a little cold, but hey, it’s better than winter.

And warmer days are coming soon 🙂

The first time my husband and I made Caribbean Jerk chicken it was in our smoker.

It was a gorgeous summer day, plus a little day drinking may have been involved 😉 .

The lack of summer sun is just what I’ve been feeling sad about in my life lately, and aren’t we known to eat our feelings?!

Our first time making it was more authentic.

This is a quick version for anyone who needs an easy, weeknight Caribbean Jerk fix.

I have made my own jerk seasoning before, but here we are using a store bought mix.

Think of this as the tired working mom’s version.

If you want to go all out, by all means make this Caribbean Jerk Seasoning.

If you’re doing the easy version, I recommend the Caribbean Seasoning from the Savory Spice Shop.

How to make Caribbean Jerk Baked Chicken

Marinate the chicken legs in some soy sauce, brown sugar, lime juice, and Caribbean Jerk seasoning.

I used a plastic gallon size baggie and place it in the fridge overnight to marinate.

You could also add ground red pepper for some added spice.

When you’re ready to bake, simply place the chicken in a dish lined with foil.

Sprinkle all sides with more jerk seasoning and some kosher salt and pepper.

The foil will make the clean up super easy!

And don’t we all need to appreciate anything that takes just a little stress off of us?!

Caribbean Jerk Baked Chicken

Bake in a 400 degree oven for 45-50 minutes.

Check to make sure it’s at least 170 degrees with a thermometer.

I recommend squeezing a little extra lime juice over top of your Caribbean Jerk Baked Chicken.

Caribbean Jerk Baked Chicken

Ingredients

  • 6 chicken legs
  • 2 1/2 Tbsps Caribbean Jerk seasoning (I used Savory Spice)
  • 1 Tbsp brown sugar
  • 1 Tbsp soy sauce
  • 1 Tbsp lime juice
  • Optional for spice: 1/2 to 1 tsp ground red pepper
  • kosher salt, pepper
  • Optional: lime wedges to squeeze over top

Instructions

  1. In a bowl or plastic gallon size bag combine the chicken, 1 1/2 Tbsps of the Caribbean Jerk seasoning, brown sugar, soy sauce, and lime juice and ground red pepper if using. Toss until evenly coated, marinate at least 1 hour or overnight.

  2. Place the chicken in a baking dish (line with foil for easy cleanup). Sprinkle all sides with remaining 1 Tbsp Caribbean Jerk seasoning, kosher salt, and pepper.

  3. Bake in a 400 degree oven for 45-50 minutes. Serve with lime wedges to squeeze over top if desired.

    Note: Check the chicken with a thermometer to make sure it is at 170 degrees.
