Smoked Chili Lime Corn
Smoked Chili Lime Corn was a nice way to mix up this side dish recipe.
There’s just something about fresh corn on the cob in summer.
So simple, yet extra special at the same time.
The smoker gives a great hickory flavor, and the chili lime garlic butter brought even more scrumptiousness 🙂
How to Make Smoked Chili Lime Corn
I shucked 4 ears of corn on the cob to start.
This middle of summer corn is some of the freshest and sweetest around.
Then melt 2 Tbsps butter in a small bowl.
And add a Tbsp lime juice, a tsp chili powder, 1/2 tsp garlic powder, kosher salt, and pepper.
Mix it all up and brush on all sides of the corn.
My kids absolutely love helping me with brushing anything, my son even calls it “painting” the corn.
Next stop is the smoker!
Set the smoker to 225 degrees and these will take 45 minutes, maybe a little longer for bigger ears of corn.
Turn them a few times throughout too.
I made these at the same time as Smoked Mexican Chicken so it was a complete meal all made on the smoker.

Smoked Chili Lime Corn
Smoked Chili Lime Corn is the perfect summer side dish and easy to make, corn on the cob brushed with a chili lime garlic butter then smoked
Ingredients
- 2 Tbsps butter
- 1 Tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp garlic powder
- kosher salt, pepper
- 4 ears corn on the cob shucked
Instructions

Melt the butter in a small bowl and add the lime juice, chili powder, garlic powder, kosher salt, and pepper. Stir until combined.

Brush the chili lime butter over all sides of the corn.

Place the corn on the smoker set to 225 degrees for 45 to 55 minutes, turning a few times throughout.
