Twice Smoked Cheesy Potatoes

I made almost our whole meal, including these Twice Smoked Cheesy Potatoes, was made on my Traeger pellet grill and everything was incredible!

My daughter and her friends came over for a fun pool day, so of course I had to be a little extra and make some fabulous recipes for them.

An easy way to cook AND be part of the pool party fun is using my smoker.

So you’ve heard of twice BAKED potatoes, right?!

Same thing here only they are smoked, giving a little extra something something đŸ™‚

How to make Twice Smoked Cheesy Potatoes

First rub 5 russet potatoes with olive oil, kosher salt, and pepper.

On to the smoker they go for 2 1/2 hours at 250 degrees.

Remove the potatoes and cut them in half lengthwise.

And let them cool for a few minutes.

Next scoop out most of the potato and put into a bowl.

To the bowl with the potatoes add 1 1/2 cup warm milk, a stick of butter at room temp, BBQ seasoning, Old Bay seasoning, kosher salt, and pepper.

Then mix with a hand mixer for 1 minute.

Taste for seasoning and add more BBQ seasoning, Old Bay, kosher salt, and/or pepper if needed. And stir in a 1 1/2 cups shredded cheese.

Spoon this luscious, cheesy, creamy potato mixture back into the potato skins.

Top with even more cheese and some green onions if you like.

And back on to the smoker for another half hour.

These are pretty delicate, so picking them up with my hands worried me a bit.

I used a metal spatula to carefully move them on and off the smoker.

Twice Smoked Cheesy Potatoes are potatoes that have been smoked and then made into a cheesy, creamy mashed potato, stuffed and smoked again

Ingredients

  • 5 large russet potatoes
  • olive oil, kosher salt, pepper
  • 1 1/2 cups milk (I used whole milk) warm
  • 1 stick butter at room temp
  • 1/2 Tbsp BBQ seasoning
  • 1/2 Tbsp Old Bay seasoning
  • 2 cups shredded cheddar cheese
  • Optional: green onion for garnish

Instructions

  1. Brush all sides of the potatoes with olive oil and sprinkle with kosher salt and pepper. Put the potatoes in a smoker set to 250 degrees for 2 1/2 hours.

  2. Remove the potatoes and cut them in half lengthwise. Let them cool slightly.

  3. Scoop out most of the potato from the skins and put in a bowl. Add the warm milk, softened butter, BBQ seasoning, Old Bay seasoning, kosher salt, and pepper. Beat on low speed with a hand mixer for 1 minute. Taste for seasoning and add more BBQ, Old Bay, kosher salt, and/or pepper if needed and beat 20 more seconds.

  4. Stir in 1 1/2 cups of the cheese. Scoop this filling back into the potato skins and top each with the remaining cheese and green onions if desired.

  5. Put the potatoes back into the smoker set to 250 degrees for 30 more minutes.

    Note: I had the best luck using a metal spatula to get the potatoes back into the smoker and removing them.
