BBQ Chicken and Veggie Bowls

BBQ Chicken and Veggie Bowls

I made a huge portion of Blackstone BBQ Chicken and Veggie Meal Prep, so basically most of the work was done when I made these BBQ Chicken and Veggie Bowls.

But I included skillet directions in the recipe card if you prefer.

How to make BBQ Chicken and Veggie Bowls

First, marinate some diced chicken thighs or breasts in garlic, olive oil, Worcestershire sauce, kosher salt, pepper, and BBQ seasoning blend.

Slice some bell peppers and a jalapeno as well.

And cook the chicken and veggies either on your Blackstone griddle or in a large skillet for about 10 minutes.

Then all you have to do is microwave a few pouches of rice.

And divide the rice up between bowls or meal prep containers and top with the chicken and veggies.

Add your favorite toppings to these BBQ Chicken and Veggie Bowls and enjoy 🙂

I set out the topping options and everyone in my family created their own bowl.

BBQ sauce, hot honey, sour cream, shredded cheese, avocado, cilantro, and lime wedges are just a few of the topping options I had.

Ingredients

  • 1 pound boneless, skinless chicken thighs (or breasts) cut into bite size pieces
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • kosher salt, pepper, BBQ seasoning blend of choice
  • cooking oil of choice
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 jalapeno pepper sliced
  • 2 to 3 microwavable rice pouches (I used Ben's Jasmine rice)
  • BBQ sauce
  • Optional toppings: cheese, hot honey, sour cream, avocado, cilantro, lime wedges

Instructions

  1. Put the chicken in a gallon size plastic bag with the garlic, olive oil, Worcestershire sauce, kosher salt, pepper, and BBQ seasoning. Massage until combined and marinate in the fridge for at least an hour.

Note: See post above for how I meal prepped a larger amount of chicken and veggies on my Blackstone and used them in a few more easy meal ideas.

  2. Preheat a large skillet or your Blackstone griddle over medium heat. Add cooking oil of choice, the seasoned chicken, and peppers plus a little more kosher salt, pepper, and BBQ seasoning.

  3. Cook 9 to 11 minutes, mixing a few times.

  4. Microwave rice according to package directions. Divide the cooked rice between 4 bowls or meal prep containers. Top each with the chicken and veggies, BBQ sauce, and add additional toppings such as cheese, hot honey, sour cream, avocado, cilantro, and/or lime wedges.
