BBQ Chicken and Veggie Bowls was an easy dinner idea I made after meal prepping some chicken and peppers on my Blackstone griddle

Ingredients
  • 1 pound boneless, skinless chicken thighs (or breasts) cut into bite size pieces
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • kosher salt, pepper, BBQ seasoning blend of choice
  • cooking oil of choice
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 jalapeno pepper sliced
  • 2 to 3 microwavable rice pouches (I used Ben's Jasmine rice)
  • BBQ sauce
  • Optional toppings: cheese, hot honey, sour cream, avocado, cilantro, lime wedges
Instructions
  1. Put the chicken in a gallon size plastic bag with the garlic, olive oil, Worcestershire sauce, kosher salt, pepper, and BBQ seasoning. Massage until combined and marinate in the fridge for at least an hour.

  2. Preheat a large skillet or your Blackstone griddle over medium heat. Add cooking oil of choice, the seasoned chicken, and peppers plus a little more kosher salt, pepper, and BBQ seasoning.

  3. Cook 9 to 11 minutes, mixing a few times.

  4. Microwave rice according to package directions. Divide the cooked rice between 4 bowls or meal prep containers. Top each with the chicken and veggies, BBQ sauce, and add additional toppings such as cheese, hot honey, sour cream, avocado, cilantro, and/or lime wedges.
