BBQ Chicken Loaded Sweet Potatoes
BBQ Chicken Loaded Sweet Potatoes are a healthy, high protein stuffed sweet potato recipe with avocado, cottage cheese, and hot honey!

How to make BBQ Chicken Loaded Sweet Potatoes
Poke a few holes in your medium sized sweet potatoes with a fork or knife, coat them with olive oil, and season with kosher salt and pepper.
This is a recipe for 2, but I made an extra sweet potato to go with my lunch the following day… always trying to work smarter, not harder 😉
Place on a baking sheet and bake at 400 degrees for about 40 to 50 minutes.

Cut the cooked sweet potatoes in half and butterfly them open.
Use a knife or a fork to mash them a bit and season with kosher salt and pepper.
Then add your cooked chicken and diced avocado.

Add the Cilantro Jalapeno Cottage Cheese Dressing, or just regular or blended cottage cheese works too.
Finally add BBQ sauce of choice, hot honey, cilantro, and a lime wedge to squeeze over top.

No way BBQ Chicken Loaded Sweet Potatoes feels like a healthy, high protein meal!
These are super delish and very filling with 25 grams of protein.

BBQ Chicken Loaded Sweet Potatoes is a healthy stuffed sweet potato recipe with avocado, cottage cheese dressing, and hot honey!
Ingredients
- 2 medium size sweet potatoes
- olive oil, kosher salt, pepper
- 1 to 1 1/2 cups cooked diced chicken (mine was from my Blackstone High Protein Meal Prep Series, details for that in post above)
- 1 large avocado diced
- 1/3 cup cottage cheese (blended if desired, or use my Cilantro Jalapeno Cottage Cheese Dressing recipe in post above)
- BBQ sauce of choice, hot honey, chopped cilantro, lime wedges
