Crispy Cucumber Seafood Salads
These Crispy Cucumber Seafood Salads are part of my Blackstone High Protein Meal Prep Series, so the shrimp for this recipe were already cooked for me.
So the only cooking involved was making crispy bowtie pasta in the air fryer.
Check out the 5 other meals I made with this meal prep series on the griddle HERE.

How to make Crispy Cucumber Seafood Salads
First boil some bowtie pasta according to the package directions, drain it and toss with olive oil, kosher salt, and pepper.
Put the pasta in your air fryer basket and set the air fryer to 380 degrees for 12 to 14 minutes, remove the air fryer basket and shake it a few times throughout.
For oven directions, place the pasta on a baking sheet and bake at 400 degrees for 14 to 18 minutes, tossing a few times.
Let cool slightly.

While the pasta was cooking, I chopped and sliced the rest of my ingredients.

Next, add the sliced cucumber, cooked shrimp, chopped imitation crab meat to a bowl.
Also, a diced avocado, chopped cilantro, and crispy pasta.

My dressing was blended cottage cheese, but mayo works too.
A little sriracha, soy sauce, lime juice, kosher salt, and pepper as well.
Toss until combined and let it sit for a few minutes.
Taste for seasoning and adjust as needed with lime juice, sriracha, salt, pepper, etc.

My sweet grandson was over this day, althought he had no interest in trying it… he was up for a quick pic!

I sure hope you love Crispy Cucumber Seafood Salads as much as I did!!
You could also add some chili crisp over top for extra flavor and crunch.

- 4 ounces chopped imitation crab
- 1/2 pound cooked shrimp diced
- 1 avocado diced
- 1/2 cup chopped cilantro
- 1/2 cup blended cottage cheese (or mayo)
- 1 to 2 tablespoons sriracha
- 1 to 2 teaspoons soy sauce
- 1 to 2 lime wedges
- Optional: chili crisp
Instructions
-
Boil the pasta according to package directions, drain, and pat dry slightly. Put the pasta back into the same empty pot that you boiled it in, drizzle about 1 tablespoon of the olive oil, and season with kosher salt and pepper.
-
Toss the pasta until combined and place in your air fryer basket. Set the air fryer to 380 degrees for 12 to 14 minutes, remove the air fryer basket and shake it a few times throughout. Let cool slightly.
Note: For oven directions, place the pasta on a baking sheet and bake at 400 degrees for 14 to 18 minutes, tossing a few times.
-
Put the cucumbers, crab, shrimp, avocado, cilantro and crispy pasta in a bowl. Add the blended cottage cheese or mayo, sriracha, soy sauce, kosher salt, and pepper in a bowl and squeeze lime over top. Toss until combined.
Note: My shrimp was already cooked as part of my Blackstone High Protein Meal Prep Series, get details for that in post above.
-
Let this sit for a few minutes, taste for seasoning and adjust as needed with adding more cottage cheese or mayo, sriracha, soy sauce, lime juice, kosher salt, and/or pepper and serve with chili crisp if desired.
Note: I found this easiest to enjoy with a spoon rather than a fork.
