Crispy Cucumber Seafood Salads has a high protein cottage cheese dressing and crispy air fried pasta with shrimp and crab for a healthy meal!

Ingredients
  • 3/4 cup dry bowtie pasta
  • olive oil, kosher salt, pepper
  • 2 to 3 mini cucumbers sliced
  • 4 ounces chopped imitation crab
  • 1/2 pound cooked shrimp diced
  • 1 avocado diced
  • 1/2 cup chopped cilantro
  • 1/2 cup blended cottage cheese (or mayo)
  • 1 to 2 tablespoons sriracha
  • 1 to 2 teaspoons soy sauce
  • 1 to 2 lime wedges
  • Optional: chili crisp
Instructions
  1. Boil the pasta according to package directions, drain, and pat dry slightly. Put the pasta back into the same empty pot that you boiled it in, drizzle about 1 tablespoon of the olive oil, and season with kosher salt and pepper.

  2. Toss the pasta until combined and place in your air fryer basket. Set the air fryer to 380 degrees for 12 to 14 minutes, remove the air fryer basket and shake it a few times throughout. Let cool slightly.

    Note: For oven directions, place the pasta on a baking sheet and bake at 400 degrees for 14 to 18 minutes, tossing a few times.

  3. Put the cucumbers, crab, shrimp, avocado, cilantro and crispy pasta in a bowl. Add the blended cottage cheese or mayo, sriracha, soy sauce, kosher salt, and pepper in a bowl and squeeze lime over top. Toss until combined.

  4. Let this sit for a few minutes, taste for seasoning and adjust as needed with adding more cottage cheese or mayo, sriracha, soy sauce, lime juice, kosher salt, and/or pepper and serve with chili crisp if desired.

    Note: I found this easiest to enjoy with a spoon rather than a fork.
