California Roll Cucumber Salad
My son saw a cucumber recipe on TikTok that apparently is alllll the rage. So I took his description of the video and made him this easy recipe for California Roll Cucumber Salad.
Quite honestly, when he was telling me about it I thought it sounded just okay, but Oh. My. Goodness. it’s phenomenal!
I get allll the hype now and can’t wait to come up with some more recipe twists for cucumber salads.
His favorite sushi roll is a California roll, so that’s the spin I put on this one.
How to make California Roll Cucumber Salad
I started by thinly slicing an English cucumber with a mandolin.
A sharp knife works too.
Then add some soy sauce and spicy mayo, just as much or as little as you like.
Also some sliced green onions and just a little kosher salt and pepper.
Some imitation crab meat and then you can put a lid on it and shake, shake, shake.
Apparently the shaking was very important to this according to my son because that’s how they did it on TikTok 😉
Slice an avocado to lay over top.
And drizzle ginger soy glaze and more spicy mayo over top.
You could also add sesame seeds, wasabi, and ginger to your California Roll Cucumber Salads!
So fresh, low carb, and very tasty!
We taste tested at the same time and gave this recipe two thumbs up!

California Roll Cucumber Salad
California Roll Cucumber Salad is a spin on the viral TikTok cucumber bowl, all the ingredients of a California sushi roll in low carb form!
Ingredients
- 1 English cucumber
- 8 ounce package imitation crab meat chopped
- 3 green onions sliced
- soy sauce, spicy mayo, kosher salt, pepper to taste
- 1 avocado sliced
- Optional: sesame seeds, pickled ginger, wasabi, ginger soy glaze (Asian section of grocery store or Amazon)
Instructions

Slice the cucumber very thin, I used a mandolin but a sharp knife works too. Put them in a bowl with a lid.

Add the crab, green onions, soy sauce, spicy mayo, and just a little kosher salt and pepper. Put the lid on the bowl and shake. Taste for seasoning and add more soy sauce or spicy mayo if needed.

Top with the sliced avocado, more spicy mayo, sesame seeds, pickled ginger, wasabi, and/or ginger soy glaze if using.

Sounds fab – is the crab meat 1.8 ounce or 18 or 1/8?

Hi Kellie, it’s a total of 8 ounces of crab meat. It was about a cup after I chopped it, hope this helps!
