Smoked Salmon Cucumber Bites
Smoked salmon cucumber bites are the perfect cold appetizer recipe to bring to any party or celebration!
They are on the lighter side which is nice, and also low carb/ keto friendly.
As simple as they are to put together, they really bring the flavor.
Perfect combination with the lemon dill cream cheese, salty and smoky salmon, all on a refreshing crisp cucumber slice.
How to make smoked salmon cucumber bites
For the cucumber I am using an English cucumber.
It’s a bit more crisp, you can eat the green part, and they are longer than a typical cucumber.
I used a mandolin to get even slices, 24 total.
If you don’t have a mandolin just use a nice sharp knife aiming for about 1/4 to 1/2 inch thick.
Place the cucumbers on paper towels to absorb any of the excess moisture.
For the cream cheese I am using whipped to make it easier to mix.
Combine about 8 oz whipped cream cheese, lemon zest, lemon juice, lots of freshly chopped dill, kosher salt, and pepper.
It is easier to mix if the cream cheese is at room temperature.
To assemble the cucumber bites simply drop a spoonful of the lemon dill cream cheese and add a slice of smoked salmon.
A little extra dill over the smoked salmon cucumber bites makes them even prettier.
I also served with them some lemon wedges on the side.
If you are lucky enough to have any of the cream cheese and smoked salmon left, serve on Ritz crackers!
Not necessarily low carb but still pretty darn amazing!

Smoked Salmon Cucumber Bites
Smoked Salmon Cucumber Bites are an easy, elegant, and low carb appetizer recipe! They look stunning but so simple to put together!
Ingredients
- 1 English cucumber
- 8 oz whipped cream cheese
- 1 Tbsp lemon zest
- 1 Tbsp lemon juice
- 2 Tbsps fresh, chopped dill
- kosher salt, pepper
- 4 oz smoked salmon
- Optional: more fresh dill for garnish, lemon wedges
Instructions

Slice the cucumber into about quarter inch to half inch rounds and place on paper towels to absorb the excess moisture.

Put the whipped cream cheese in a bowl and use a microplane grater to zest a tablespoon of zest from the lemon. Then add the lemon juice and fresh dill along with the kosher salt and pepper. Stir until evenly combined.

Top each cucumber round with a spoonful of the whipped cream cheese mixture and some of the smoked salmon. Garnish with more fresh dill and lemon wedges if desired.
