Ingredients
  • 1 English cucumber
  • 8 oz whipped cream cheese
  • 1 Tbsp lemon zest
  • 1 Tbsp lemon juice
  • 2 Tbsps fresh, chopped dill
  • kosher salt, pepper
  • 4 oz smoked salmon
  • Optional: more fresh dill for garnish, lemon wedges
Instructions
  1. Slice the cucumber into about quarter inch to half inch rounds and place on paper towels to absorb the excess moisture.

  2. Put the whipped cream cheese in a bowl and use a microplane grater to zest a tablespoon of zest from the lemon. Then add the lemon juice and fresh dill along with the kosher salt and pepper. Stir until evenly combined.

  3. Top each cucumber round with a spoonful of the whipped cream cheese mixture and some of the smoked salmon. Garnish with more fresh dill and lemon wedges if desired.
