Air Fryer Garlic Chicken and Potatoes

Do you want one of the EASIEST 3 ingredient dinner recipes ever?! Well you’ve come to the right place for Air Fryer Garlic Chicken and Potatoes.

The 3 ingredients are chicken, redskin potatoes, and garlic and herb seasoning (I used Kinder’s).

I am also using olive oil, kosher salt, and pepper… which I do count as “freebie” ingredients 😉

It’s back to school and fall sports madness around here, and I even managed to make this air fryer meal right before my son’s football game on a busy weeknight.

How to make Air Fryer Garlic Chicken and Potatoes

First dice a pound of redskin potatoes with the skin on.

Then put them in a bowl along with a drizzle of olive oil, some garlic and herb seasoning, kosher salt, and pepper.

Toss in the bowl until combined.

Next transfer the seasoned potatoes into your air fryer basket.

Cook the potatoes at 400 degrees in the air fryer for 5 to 6 minutes.

As the potatoes cooked in the air fryer, dice a pound of boneless, skinless chicken thighs.

Put them into a bowl (I used the same bowl as the taters) and season with olive oil, garlic and herb seasoning, kosher salt, and pepper.

Toss until combined and put them in the air fryer, scooting the potatoes to one side and adding the chicken to the other side.

Back into the air fryer this goes for another 10 to 12 minutes at 400 degrees.

Ingredients

  • 1 pound redskin or gold potatoes cut into bite size pieces
  • olive oil, kosher salt, pepper, garlic herb seasoning blend of choice (I used Kinder's)
  • 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • Optional: ranch dressing for dipping

Instructions

  1. Put the potatoes in a bowl and add a drizzle of olive oil, season with kosher salt, pepper, and your garlic herb seasoning blend. My seasoning already had salt so I went light on the kosher salt. Toss until evenly mixed.

  2. Put the potatoes in the air fryer basket. Set the air fryer to 400 degrees for 5 to 6 minutes.

  3. Put the chicken in a bowl (I used the same bowl as the potatoes), drizzle with olive oil and season with kosher salt, pepper, and the garlic herb seasoning. Toss until coated.

  4. Add the chicken to the air fryer basket with the potatoes, I used tongs to move the potatoes to one side and put the chicken on the empty side.

  5. Set the air fryer to 400 degrees for 10 to 12 more minutes. Serve with ranch dressing for dipping if desired.
