Slow Cooker Peanut Chicken Noodles
Crock Pot cooking with my granddaughter was extra fun! We made an easy dinner recipe for Slow Cooker Peanut Chicken Noodles.
She even did most of the work, so if we can do it… so can you 🙂
The peanut sauce is basically a combo of a few store bought sauces, so you know my promise of “easy” is accurate.
How to make Slow Cooker Peanut Chicken Noodles
Start with some hoisin sauce, peanut sauce, and soy sauce.
All of these can be found in the Asian section of the store.
Along with a pound of chicken, an onion, shredded carrots, garlic, and a lime.
First add the diced onion, carrots, and minced garlic.
And just a little kosher salt and pepper.
Simple enough so far, right?!
Then add some hoisin sauce, peanut sauce, soy sauce, and lime juice.
I didn’t even stir this.
Just set it on low for 6 to 8 hours, or on high for 3 to 4 hours.
Once the chicken is cooked, shred it with two forks right in the slow cooker.
And add a few spoonfuls of peanut butter and 8 ounces of cooked noodles.
I went with spaghetti, but rice noodles or low mein noodles would be great!
Stir until combined and enjoy!
Garnish Slow Cooker Chicken Peanut Noodles with chopped peanuts and green onions if desired 🙂
I also drizzled sriracha over top for a little spicy kick.

Slow Cooker Peanut Chicken Noodles
Slow Cooker Peanut Chicken Noodles is a fun and unique Crock Pot recipe, hoisin peanut noodles with chicken slow cooked to perfection
Ingredients
- 1 pound boneless, skinless chicken breasts
- kosher salt, pepper
- 1 onion diced
- 1 cup shredded carrots
- 5 to 6 cloves garlic minced
- 3/4 cup peanut sauce (Asian section of store, pic in post above)
- 3/4 cup hoisin sauce
- 3 tablespoons soy sauce
- 8 ounces noodles of choice (rice noodles, lo mein noodles, or spaghetti)
- 3 tablespoons peanut butter
- Optional: sriracha, chopped peanuts, green onions
Instructions

Put the chicken into the slow cooker and add a little kosher salt and pepper, plus the onions, carrots, garlic, peanut sauce, hoisin sauce, and soy sauce.

Turn the slow cooker on low for 6 to 8 hours, or on high for 3 to 4 hours. Shred the chicken with two forks right in the slow cooker.

Boil the noodles according to the package directions, drain, and add them to the slow cooker along with the peanut butter. Stir until combined.

Serve with optional toppings such as sriracha, chopped peanuts, and green onions.
