Ingredients
  • 1 pound boneless, skinless chicken breasts
  • kosher salt, pepper
  • 1 onion diced
  • 1 cup shredded carrots
  • 5 to 6 cloves garlic minced
  • 3/4 cup peanut sauce (Asian section of store, pic in post above)
  • 3/4 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 8 ounces noodles of choice (rice noodles, lo mein noodles, or spaghetti)
  • 3 tablespoons peanut butter
  • Optional: sriracha, chopped peanuts, green onions
Instructions
  1. Put the chicken into the slow cooker and add a little kosher salt and pepper, plus the onions, carrots, garlic, peanut sauce, hoisin sauce, and soy sauce.

  2. Turn the slow cooker on low for 6 to 8 hours, or on high for 3 to 4 hours. Shred the chicken with two forks right in the slow cooker.

  3. Boil the noodles according to the package directions, drain, and add them to the slow cooker along with the peanut butter. Stir until combined.

  4. Serve with optional toppings such as sriracha, chopped peanuts, and green onions.
