Steak and Avocado Quesadillas
Steak and avocados go really well together, so I decided to pair them in a dinner recipe for these Steak and Avocado Quesadillas that you can make in a skillet or Blackstone griddle.
This delicious meal is perfect for a busy weeknight, especially if you are using leftover steak like I did.
I made Shrimp and Chorizo Baked Burritos last week, so I had 4 burrito size tortillas left, since 8 come in a package and I only used 4 for the burritos.
We also grilled some steaks over the weekend and I planned ahead to grill an extra steak for these quesadillas.
How to make Steak and Avocado Quesadillas
I prefer making quesadillas on my Blackstone griddle, but today I used a skillet.
Set a large skillet (or your griddle) over medium low heat and add a drizzle of olive oil.
For each quesadilla, lay the tortilla flat and sprinkle some cheese on one side.
Then add the already cooked and diced steak.

Half of an avocado, sliced, goes over top of each quesadilla.
And then more cheese.
I am using Monterey Jack cheese, but any cheese you prefer would be great…I mean, it’s cheese so you really can’t go wrong 😉

Then fold the empty side over the filled side.
Cook 1 to 2 minutes and flip it.
Another 1 to 2 minutes and you have yourself a yummy, stuffed steak quesadilla.

Serve Steak and Avocado Quesadillas with salsa, sour cream, hot sauce…whatever you like.
Such a great dinner that’s ready in less than 15 minutes!

Steak and Avocado Quesadillas
Steak and Avocado Quesadillas are such a quick and easy one pan dinner idea, especially if you are using some leftover steak!
Ingredients
- 2 tablespoons olive oil
- 4 burrito size soft tortillas
- 3 cups shredded cheese of choice
- 3 cups cooked, diced steak
- 2 avocados sliced
- Optional: salsa, sour cream, hot sauce
Instructions

In a large skillet or your Blackstone griddle over medium low heat, add olive oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet, or make them all at once on your Blackstone griddle.

On one side of the tortilla add some cheese, steak, half of an avocado (sliced), and little more cheese. Fold the empty side of the tortilla over the side with the filling. Let cook for about 2 minutes, then flip and let cook 2 more minutes.

Remove and repeat with the remaining ingredients (if using a skillet). Makes 4 quesadillas. Serve with salsa, sour cream and/or hot sauce if desired.
