Steak and avocados go really well together, so I decided to pair them in these Steak and Avocado Quesadillas.
This delicious meal is perfect for a busy weeknight, especially if you are using leftover steak like I did.
I made Shrimp and Chorizo Baked Burritos last week, so I had 4 burrito size tortillas left, since 8 come in a package and I only used 4 for the burritos.
We also grilled some steaks over the weekend and I planned ahead to grill an extra steak for these quesadillas.
That way when my super busy and hectic Monday workday started to get the best of me, I could at least relax knowing dinner would be a quick, easy, and painless ordeal.
How to make Steak and Avocado Quesadillas
I prefer making quesadillas in a skillet.
Set a large skillet over medium low heat and add a drizzle of olive oil.
For each quesadilla, lay the tortilla flat and sprinkle some cheese on one side.
Then add the already cooked and diced steak.
Half of an avocado, sliced, goes over top of each quesadilla.
And then more cheese.
I am using Monterey Jack cheese, but any cheese you prefer would be great…I mean, it’s cheese so you really can’t go wrong 😉
Then fold the empty side over the filled side.
Cook 1 to 2 minutes and flip it.
Another 1 to 2 minutes and you have yourself a yummy, stuffed steak quesadilla.
Serve Steak and Avocado Quesadillas with salsa, sour cream, hot sauce…whatever you like.
Such a great dinner that’s ready in less than 15 minutes!
