Black and Blue Steak Tacos
Black and Blue Steak Tacos are my newest recipe spin on tacos by using blackened steak and blue cheese.
So maybe I’ve been on a bit of a taco kick lately…but, hey, is that wrong?!
Heck no…fun taco recipe ideas are endless!
And if I want to try three taco recipes in one week, I should go for it, right?!
My steak of choice here is a New York strip.
I brushed it with some olive oil and sprinkled both sides with blackened seasoning and a little kosher salt and pepper.
How to make Black and Blue Steak Tacos
This gorgeous steak will grill three to four minutes per side over a medium grill.

Once the steak is removed from the grill and resting.
I lowered the heat and added the street taco size tortillas to warm them up a bit.
They are better warm in my opinion and if the grill is already on it just makes sense to warm them on the grill.
When the blackened steak is fully rested dice it up into bite size pieces.
I went with about half inch pieces because the street taco size tortillas are so small.
Fill the warm tortillas with steak and drizzle with sour cream.
You could also go with ranch dressing or even blue cheese dressing in place of the sour cream.
Then pile on the fixings such as lettuce, cheese, and of course the crumbled blue cheese…hence the name Black and Blue Steak Tacos 🙂
One of my all time favorite burger combos is the black and blue burger.
Now I have to say that one of my all time tacos has that same yummy black and blue combo 🙂

Black and Blue Steak Tacos
Blackened steak with blue cheese served as a taco
Ingredients
- 1 pound steak of choice (sirloin, New York strip, or flat iron)
- 1/2 Tbsp olive oil
- 1 Tbsp blackened seasoning
- kosher salt, pepper
- 12 street taco size tortillas
- 3/4 cup sour cream
- 1 cup shredded lettuce
- 1 cup shredded Cheddar cheese
- 4 oz crumbled blue cheese
Instructions

Brush both sides of the steak with olive oil and sprinkle with the blackened seasoning and kosher salt and pepper.

Grill the steak over medium to medium high heat 3-4 minutes per side, depending on thickness and how you like it cooked.

As the steak rests, turn the grill down to low and grill the tortillas a few seconds per side.

Dice the steak into 1/2 inch pieces. Fill the tortillas with steak, drizzle with sour cream, add shredded lettuce, cheddar cheese, and blue cheese.
