Ingredients
  • 1 pound steak of choice (sirloin, New York strip, or flat iron)
  • 1/2 Tbsp olive oil
  • 1 Tbsp blackened seasoning
  • kosher salt, pepper
  • 12 street taco size tortillas
  • 3/4 cup sour cream
  • 1 cup shredded lettuce
  • 1 cup shredded Cheddar cheese
  • 4 oz crumbled blue cheese
Instructions
  1. Brush both sides of the steak with olive oil and sprinkle with the blackened seasoning and kosher salt and pepper.

  2. Grill the steak over medium to medium high heat 3-4 minutes per side, depending on thickness and how you like it cooked.

  3. As the steak rests, turn the grill down to low and grill the tortillas a few seconds per side.

  4. Dice the steak into 1/2 inch pieces. Fill the tortillas with steak, drizzle with sour cream, add shredded lettuce, cheddar cheese, and blue cheese.
