Lazy Bang Bang Chicken Bowls
Sometimes I cook from scratch, and sometimes I need super easy dinner ideas… this is one of those times, friends! This recipe for Lazy Bang Bang Chicken Bowls has maximum yumminess with minimal effort.
We are taking some help from the store with frozen popcorn chicken and microwave rice pouches.
I mean, the word “lazy” is in the recipe title so don’t shame me for taking full advantage of these convenient ingredients 😉
If preferred, though… you can make this recipe for Homemade Bang Bang Chicken Bites in the air fryer.
How to make Lazy Bang Bang Chicken Bowls
The easy to make bang bang sauce has just 3 ingredients.
First put 1/3 cup of mayo or nonfat plain Greek yogurt in a bowl with 1/3 cup sweet Thai chili sauce and some sriracha.
Then just stir until combined.
Next either make the homemade chicken bites or cook 12 to 16 pieces of frozen popcorn chicken according to the package directions.
The amount will depend on the chicken size and how hungry you are.
I made mine in the air fryer at 400 degrees for 12 minutes.
And while the chicken bites were doing their thing in the air fryer, I microwaved the rice pouches.
Crispy, crunchy bites of chicken air fried to perfection… and I didn’t even break a sweat 😉
Serve the Lazy Bang Bang Chicken Bowls just like this!
I dipped the chicken in the sauce and served over the Jasmine rice with some sesame seeds and green onions.
Of course we added more saucy goodness and mixed it all together.
This was the perfect lunch for two!
My daughter came over for a visit and probably had no idea how truly easy these bowls were 🙂

Lazy Bang Bang Chicken Bowls
Bang Bang Chicken Rice Bowls is an easy dinner recipe using microwave rice pouches and frozen popcorn chicken or crispy air fried chicken with a homemade sauce!
Ingredients
- 12 to 16 pieces frozen popcorn chicken (or homemade air fryer chicken recipe link in post above)
- 1/3 cup mayo or plain Greek yogurt
- 1/3 cup sweet Thai chili sauce
- 1 to 2 tablespoons sriracha
- 2 to 3 cups cooked Jasmine rice (I used 2 of the microwave rice pouches)
- Optional: sesame seeds, green onions
Instructions

Cook the popcorn chicken according to the package directions in either the oven or air fryer (mine cooked in the air fryer for 12 minutes at 400 degrees), or make the homemade air fried chicken from the recipe link above.

Mix together the mayo or yogurt, sweet Thai chili sauce, and sriracha in a bowl.

Divide the rice between two bowls and top each with the cooked chicken, bang bang sauce, and sesame seeds and green onions if desired.
Note: You could also toss the chicken with some of the sauce before topping the rice bowls if desired.
