Air Fryer Breakfast Tortilla Wraps

These Air Fryer Breakfast Tortilla Wraps are possible thanks to the very popular TikTok four way folding method.

But what sets these apart is spending a few minutes in the air fryer to create a crispy golden brown tortilla.

You could certainly mix these up with any breakfast ingredients of choice, but I went with eggs, sausage, and cheese.

Plus a unique sweet and spicy sauce to bring it all together.

How to make air fryer breakfast tortilla wraps

First set a skillet over medium heat and add half a pound of breakfast sausage.

Cook the sausage for a few minutes breaking it apart with a spatula as it cooks.

While the sausage was cooking I made that sweet and spicy sauce that we talked about earlier.

This may seem a little crazy but trust me it’s delicious, a mix of mayo, sriracha, and maple syrup for the win!

Once the sausage is cooked remove it from the skillet, but leave a small amount of sausage fat in the skillet.

Crack 3 eggs in a bowl along with some milk, kosher salt, and pepper.

Beat with a fork and put the eggs into the skillet and scramble them over medium heat for a few minutes.

Now, my friends, we are ready to build these wraps!

This recipe will make 2 to 3 wraps, depending on how stuffed you like them.

Use a sharp knife or kitchen scissors to cut the bottom part of the large, burrito size tortillas up to the middle as shown below.

Then envision that each fourth of the tortilla is its own separate space for the different ingredients.

In the first fourth spread the sauce, the sausage goes above the sauce, scrambled eggs to the right of the sausage, and some shredded cheese in the final fourth below the eggs.

Next fold the tortilla up into one adorable little breakfast package.

The sauce section goes up over the sausage, then fold to the right over the egg, and finally one more fold down over the cheese.

Spray or brush oil on all sides of the tortilla and place in the air fryer basket.

Finally set the air fryer to 400 degrees for 4 to 6 minutes.

We served ours with the extra sweet and spicy sauce on the side.

Air Fryer Breakfast Tortilla Wraps use the TikTok four way wrap method to make a crispy and delicious breakfast with a spicy maple sauce!

Ingredients

  • 1/2 pound ground breakfast sausage
  • 3 eggs
  • 2 tablespoons milk
  • kosher salt, pepper
  • 3 tablespoons mayo
  • 1 tablespoon maple syrup
  • 1/2 to 1 tablespoon sriracha
  • 2 to 3 large burrito size tortillas (depending on how stuffed you want to make them)
  • 1 cup shredded cheese of choice
  • olive oil or spray cooking oil

Instructions

  1. Set a skillet over medium heat and add the sausage. Cook 4 to 5 minutes breaking apart the sausage with a spatula as it cooks.

  2. While the sausage cooks, crack the eggs in a bowl and add the milk, kosher salt, pepper and beat with a fork. Also mix together the mayo, maple syrup, and sriracha in a separate bowl.

  3. Remove the sausage from the skillet leaving some of the fat from the sausage. Set the same skillet over medium heat and add the eggs. Cook the eggs two to three minutes scrambling as they cook with a spatula.

  4. Use kitchen scissors to cut from the bottom of each tortilla just to the center.

  5. Spread the spicy maple sauce on the first fourth of the tortilla, and the sausage on the fourth above the sauce, egg next to the sausage, and the last fourth add the cheese.

  6. Fold the first fourth of the tortilla with the sauce up over the sausage, then fold over the egg, and finish wrapping with the cheese section.

  7. Brush both sides with olive oil or cooking spray and place the wraps into the air fryer basket. Set the air fryer to 400 degrees for 4 to 6 minutes.
